    This homemade Passion Fruit Simple Syrup is perfect for cocktails, mocktails, lemonades, and more! You can even drizzle it over ice cream, desserts, or pancakes! Making this syrup at home is easy, simple, and it takes less than 30 minutes. Passion fruit is sweet, tangy, and it makes a delicious summer syrup.

    Why This Recipe Works

    The best tropical flavor - This is the best syrup for summer! You can make a delicious Passion Fruit Margarita or a Passion Fruit Mojito as well as many other cocktails with this syrup. Aside from cocktails, you can also use it for mocktails, iced tea, lemonade, or and more! You can even drizzle it over ice cream, pancakes, or waffles! You can also add a little bit of the syrup into this Passion Fruit Smoothie for extra sweetness!

    Quick and easy - This recipe calls for only 3 ingredients and it can be done in less than 30 minutes. It’s easy to make ahead for any party or get-together. It keeps well in the fridge for up to 2 weeks!

    Better than store-bought - Making syrup with fresh passion fruit yields syrup with a much better fresh passion fruit flavor. I use store-bought syrups sometimes when I truly don’t have time to make my own at home but nothing compares to homemade! Some syrup flavors are harder to achieve with homemade syrups but not passion fruit! It's super easy and it has lots of true passion fruit flavor!

    Ingredients

    • Passion fruit - You'll need the pulp from 2-3 whole fresh passion fruits. 2 is enough if you don't have more but 3 is best for a stronger passion fruit flavor.
    • Cane sugar - White sugar is usually used for homemade syrup but I use cane sugar for most of my recipes because it has a neutral flavor just like white sugar but it's less processed. You can use the two interchangeably.
    • Water - Use filtered water whenever possible for the best flavor if using tap water.

    Variations and Substitutions

    • Passion fruit puree - If you don't have whole passion fruits, you can use store-bought puree. I don't recommend this because most have added sugar but it's a possibility in a pinch. If your passion fruit puree has added sugar, you can just use it instead of the syrup!
    • Frozen passion fruit - You can also use frozen passion fruit for this syrup just like I did in this Pineapple Passion Fruit Lemonade. It's usually pure 100% passion fruit and it's a great fresh passion fruit substitute for this syrup.
    • Sugar-free sweetener - If you want you can use a sugar-free sweetener in place of the cane sugar. I haven't tried it so I can't guarantee the results but anything that can be replaced with sugar in a 1:1 ratio should work. Keep in mind it may change the flavor and because there is no sugar, the syrup will go bad much quicker.

    Step-by-Step Instructions

    1. Add cane sugar, water, and passion fruit pulp into a small saucepan.
    2. Bring to a boil stirring constantly until all of the cane sugar dissolves.
    3. Lower the heat and simmer for 15 minutes.
    4. Take the syrup off the heat and allow it to cool for 5-10 minutes.

    1. Strain the syrup through a fine mesh strainer into a large measuring cup or a bowl.
    2. Pour into an airtight glass jar and wait for it to cool down completely before closing with a lid.
    3. Store in the fridge for up to 2 weeks.

    Serving Suggestions

    • Cocktails - Passion fruit syrup is amazing in any tropical cocktails, especially in anything with rum or tequila! Try it in white rum cocktails like this Passion Fruit Mojito or blanco or reposado tequila cocktails like this Passion Fruit Margarita.
    • Mocktails - This syrup is great for any summer mocktail!
    • Lemonades and sodas - You can add this syrup to sparkling water to make your own passion fruit soda or add it to homemade lemonade instead of regular sugar. This syrup would also be delicious in this Iced Matcha Lemonade.
    • Tea - You can sweeten both hot and iced tea with this syrup. It's great in green tea (just replace the peach syrup with this one in this Iced Peach Green Tea) or fruit or berry tea like this Iced Raspberry Passion Tea.
    • Smoothies - You can add it to your smoothies for extra sweetness instead of dates or other sweeteners. Try it in this Passion Fruit Smoothie.
    • Food - You can drizzle this syrup over ice cream, desserts or a sweet breakfast like pancakes, crepes, waffles, or French toast.

    Storing

    Fridge - Keep the syrup in an airtight jar in the fridge for up to two weeks when stored properly. Make sure to always use a clean spoon. The syrup may naturally separate because of the passion fruit pulp. This is fine and the syrup just needs to be stirred before using. Keep in mind that if you're made the syrup sugar-free, it won't last as long because sugar acts as a preservative here.

    Freezer - Freeze any leftover syrup you won't be able to use in a small freezer-safe container. I like using multiple small 2-4 serving containers (1-2 tablespoon per serving) and labeling them so that I know how much I need to defrost each time. Defrost the syrup in the fridge in just a couple of hours.

    FAQs

    My syrup has a sediment, is this okay?

    Because of the passion fruit pulp, the syrup may separate and settle on the bottom as it sits in the fridge. This is still ok to eat, just stir it every time before using. If the syrup develops a weird smell, changes color, or has any sort of mold floating on top or in the syrup, discard it immediately.

    Can I use a sugar-free sweetener?

    Yes, anything that can be used in a 1:1 ratio in place of regular sugar should work. Keep in mind it will most likely change the flavor of the syrup and because it has no sugar, it won't last as long and will spoil much quicker so keep an eye on it.
