Why You'll Love This Watermelon Smoothie
The best flavor combo - If you’ve never tried watermelon with strawberries, fresh mint, and lime juice, you’ve got to give this smoothie a try! They work so well together. There's no banana, no milk, and no protein powder, so it's super refreshing and light - perfect for beating the summer heat!
No processed sugar - Unlike store-bought slushies, this smoothie is naturally sweet from the watermelon and strawberries, and a little tangy from the lime. Blending them with coconut water makes it even better! There's no added sugar, it's naturally gluten-free, and vegan as well!
Simple and easy - You only need 5 ingredients to make the smoothie, and it’s super simple. All you have to do is toss everything into a high-speed blender, and your smoothie is done in just a few minutes!

Ingredients
- Watermelon - You will need to dice and freeze your watermelon first. If you use fresh watermelon and blend it with ice, the smoothie will be too icy and watery. Frozen watermelon makes it thicker and gives it a slushy texture.
- Strawberries - I also recommend frozen strawberries, but fresh ones will work too in a pinch, as long as your watermelon is frozen. I like to dice mine before freezing so they're easier to blend.
- Fresh mint - You’ll need fresh mint here. Dried mint won’t work in this smoothie. If you don’t have it, you can leave it out, but I highly recommend adding it. It adds a ton of flavor and complements the watermelon and lime really well!
- Lime juice and zest - You’ll need freshly squeezed lime juice, but you can also add fresh lime zest as well for even more zesty flavor. I highly recommend it! Use organic lime for zesting whenever possible. Please don’t use bottled lime juice; fresh lime tastes so much better!

Variations and Substitutions
- Turn it into a smoothie bowl - You can add less coconut water or none at all to turn it into watermelon soft serve ice cream rather than a drinkable smoothie. You can also blend it in a food processor if you’re not adding any liquid, but a high-speed blender works great.
- Lemon juice - If you don't have a lime, you can use lemon juice and zest, but I recommend lime because it's zestier and just goes better with the other flavors.
- Raspberries - If you don't have strawberries, you can use frozen raspberries instead. I would do half the amount, though, because they have a strong, tangy flavor that could overpower the watermelon.
Step-by-Step Instructions
- To a high-speed blender, add frozen watermelon, strawberries, fresh mint leaves, lime zest if using, lime juice, and coconut water (start with 1 cup of coconut water, adding more if needed).
- Blend on high until smooth. Use your blender’s tamper to help it blend. This smoothie is a little thicker.

Tips & Tricks!
- Frozen watermelon and no ice - Please freeze your watermelon (and strawberries) in small chunks first before making this smoothie. Blending fresh watermelon with ice just won't yield the same texture. It will separate more, and it'll be much more watery and just sad-looking.
- Don't add too much mint - You may be tempted to add more than just the 4-5 leaves of fresh mint, but I promise you it's just the right amount. If you really like mint, you can add more, but it can become overpowering quickly if you add too much.
- Use a high-powered blender - I really like my Vitamix blender. It pulverizes everything quickly and completely blends the mint leaves. If your blender isn't as strong, it might leave little green specks in the smoothie, and you may taste the mint a little more. To minimize this, add the mint to the blender first so that it's closer to the blades and gets blended first and for longer.
Serving and Storing
You can either serve it in a glass as I did here, or if you made it thicker and scoopable, you can serve it in bowls topped with berries as you would soft-serve ice cream!
The smoothie is best enjoyed right away while it’s still partially frozen and has the right texture. If you do need to store it, keep it in an airtight jar in the fridge for up to 24 hours. I don’t recommend refreezing it unless you're turning it into ice cream and just want it to harden a little more.
FAQs
No, I don't recommend adding any protein powder to this smoothie. It's a very watery one, and it just wouldn't work with the texture.
