Ingredients
- Pineapple - Finely chopped fresh pineapple is best here. The better and sweeter the pineapple, the better the syrup will be. You can use frozen pineapple in a pinch.
- Cane sugar - White sugar will give you the most neutral flavor but I like using cane sugar instead which is similar but slightly less processed than white sugar. I don't recommend using brown sugar because it would have too much of a molasses flavor.
- Water - Use filtered water whenever possible.
Variations and Substitutions
- More fruit - You can add other fruits like mango or passion fruit for a fun tropical syrup. You can also make other syrups with the same ratios and mix them together later when you make your drinks.
- Sugar-free - You can use any sugar-free sweetener that can be used in a 1:1 ratio instead of regular white sugar. I haven't tried it so I can't guarantee results. Keep in mind the flavor of the syrup will change depending on what sweetener you use. Also because it has no sugar, the syrup may spoil much more quickly.
Step-by-Step Instructions
- Add pineapple, cane sugar, and water to a medium saucepan.
- Bring the mixture to a boil stirring constantly until the sugar dissolves.
- Lower the heat and simmer the syrup for 15 minutes.
- Allow it to cool for 5-10 minutes and strain the syrup squeezing as much juice out of the pineapple as possible.
- Pour into a glass jar and wait for it to cool down before closing with a lid.
- Store in the fridge for up to 2 weeks.
Save the pineapple - Don't toss the discarded pineapple! It has a candied pineapple flavor and you can store it in an airtight container in the fridge for a few days or in the freezer for a few months. Add it to desserts, pancakes, waffles, French toast, oatmeal, and more!
Recommended Uses
- Cocktails - This syrup is great in any cocktails with vodka, white rum, or blanco and reposado tequila. Try it in Frozen Pineapple Margarita, Pineapple Jalapeno Margarita, Pineapple Coconut Margarita, or a Skinny Pina Colada.
- Mocktails - You can make a delicious pineapple mocktail with this by mixing the syrup with sparkling water or your favorite pineapple soda (I like LaCroix with no sugar) and a fruit juice like orange juice, passion fruit pulp, or a non-alcoholic spirit.

Storing
- Fridge - Store the syrup in an airtight jar in the fridge for up to 2 weeks.
- Freezer - You can freeze any leftover syrup either in an ice cube tray or small freezer-safe containers. I like using 2-4 serving containers (1-2 tablespoon per serving) and labeling them so I know exactly how much syrup I will need to defrost. I like using the small containers because this syrup tends to not freeze completely and it's hard to take out of the ice cube tray without it melting. Freeze for 3-4 months when stored properly.
FAQs
If the syrup has an off color, smells weird, or it develops any kind of mold, discard it immediately. It may naturally separate because of the high fruit content. This is natural and just needs to be stirred before use.
Anything with a high sugar content naturally isn't great for you but this homemade syrup has no weird flavors, colors, or additives so it's arguably much better for you than most store-bought syrups. And I guarantee it also has a much better flavor!
