If you're making a big batch for a crown and need to prep some of it in advance, I recommend chopping the red onion, jalapenos, and tomatoes the night before. Store them either together or separately in an airtight container in the fridge. Bonus points if you're using vacuum-sealed containers to keep the veggies extra fresh. I don't recommend pre-chopping the peaches because they can turn brown as they sit.
