A delicious side for practically anything - Teriyaki sauce goes amazing with a hardier vegetable like green beans. The salty and savory flavor balances out their bitterness perfectly. Serve these as a side, in a salad, or as an addition to any rice or quinoa bowls. You can pair them with practically any protein! They're also a great side for the holiday table to change things up! Try them for Thanksgiving or the Christmas season!
Easy and quick - These green beans take less than 30 minutes to make and you only need 5 ingredients. If you're making your own teriyaki sauce, I recommend doing that in advance so it's already ready for you in the fridge when you're making these. Preparing your own sauce might sound intimidating but I promise you it's really easy and you can always use the ingredients for a variety of other sauces or dressing!
Great for meal prep - These can last you in the fridge for a few days and you can use the leftovers for salads or serve them as a side with things like chicken, salmon, meat, tofu, or anything else! They're great for work or school lunches as well because they're delicious both hot and cold!
Ingredients
- Green beans - You want to use fresh, healthy-looking green beans that are bright in color and have no visible brown spots or mold. They should be firm and not wilted. You know they're wilted when they're easy to bend.
- Avocado oil - I always use 100% pure avocado oil for roasting and cooking because it has a high smoke point and a neutral flavor but any cooking oil you have and prefer works great!
- Teriyaki sauce - You can either make your own Teriyaki Sauce or use store-bought. I always recommend homemade because you know exactly what ingredients are in it and it has the best flavor but store-bought is great too in a pinch. Teriyaki sauce is most often made with soy sauce, honey, rice vinegar, toasted sesame oil, ginger, and garlic.
- Green onion - I like to sprinkle on some green onion (mostly green parts) as garnish for serving to add color, flavor, and freshness. This is optional but recommended!
- Toasted sesame seeds - This one is optional but you can sprinkle on some toasted sesame seeds before serving as a garnish and for some added crunch. You can use a mix of white and black sesame seeds to make it more fun as well!
Variations and Substitutions
- Different vegetables - You can make this recipe using a variety of other veggies besides just green beans! I have a separate recipe for Teriyaki Brussels Sprouts but you can also use broccoli, bell peppers, onions, zucchini, mushroom, or even carrots! You can do a mix or stick to just one or two depending on what you have. Keep in mind hardy vegetables take longer to cook than softer ones.
- Add more crunch - You don't have to stop at sesame seeds. Add some raw or toasted sunflower seeds or even pumpkin seeds. Hemp hearts are also a great addition if you want to add some extra protein.
- Use frozen green beans - You don't have to have fresh green beans for this recipe. Frozen ones work just as great!
- Add some heat - If you want the green beans to be spicier, add some red pepper flakes before roasting or hot sauce before serving!
Step-by-Step Instructions
- Preheat your oven to 425F.
- Cut off the ends of your green beans on both sides.
- Add the green beans to a large baking sheet and toss with avocado oil.
- Roast them for 20 minutes until golden and slightly blackened.
- Lower the heat to 400F and take the green beans out of the oven.
- Drizzle them with teriyaki sauce and toss to coat well.
- Return them back into the oven for 2-3 minutes to warm up the sauce and get them slightly caramelized.
- Serve the green beans sprinkled with toasted sesame seeds and green onion and enjoy!
Tips & Tricks
- Teriyaki sauce has a low smoke point - Don't cook the green beans with the teriyaki sauce for too long to avoid it burning. The sauce is already cooked and only needs to be warmed up.
- Blanch them first - If you want the green beans to stay green even after roasting, I recommend blanching them first. I honestly never do this because it's just an extra step and I don't mind the slightly more yellowish-green color but if you prefer them to be greener and crunchier, blanching will do the trick!
- Use high-heat - Roasting green beats at a high temperature ensures they crisp up properly and don't have time to soften too much.
Serving Suggestions
- Chicken, turkey, or any meats - You can serve these green beans with any roasted, grilled, or sauteed chicken, turkey, or meat. They would be delicious with a good steak or practically anything from the grill! They also make a great side for Thanksgiving if you want to change up your classic green bean casserole.
- Fish and seafood - They are amazing with grilled, roasted, or sauteed salmon. I'm sure they would also be delicious with other types of fish or shrimp!
- Salads and grain bowls - Green beans make a great addition to salads, especially once they're cold as leftovers! You can add them to rice or quinoa bowls along with other roasted or fresh veggies and your choice of protein. This is definitely my favorite way to serve them!
- With eggs - If you have leftovers, they're a great addition to breakfast or brunch with some scrambled or sunny-side-up eggs! It might sound unusual, but I promise you it's so good and a great way to get some greens into your breakfast!
- With toast or anything else - I could honestly eat these on their own they're so good! Enjoy them on the side of some toasted bread with cream cheese or your favorite spread. Even with just a buttered toasted slice of sourdough bread, they're amazing!
Storing and Reheating
You can store the roasted green beans in an airtight container in the fridge for up to 3-4 days though they will taste their best the first 2 days. I don't recommend freezing them, the texture will be too mushy once defrosted.
If you want to reheat them, the easiest way to do it is in a pan or a saucepan with a splash of water. You can also reheat them in a preheated oven at 300F on a baking sheet lined with parchment paper or in a baking dish for about 10 minutes.

Yes, totally! I have a separate Roasted Frozen Green Beans recipe as well but the instructions are pretty much the same, I just cook them for 5 extra minutes. Just follow the directions of this recipe as you normally would. There's no need to thaw the green beans first.
No, I don't think it's necessary for most recipes, this one included. It can help to preserve their color and flavor as well as prevent them from getting too soft and mushy after cooking. You can definitely blanch them first if you prefer.
