What Makes These Popsicles So Good
Refreshing with a true passion fruit flavor - Forget store-bought popsicles with artificial flavors and colors. These are made with real passion fruit pulp that comes either frozen or you might find it in the juice section of your grocery store. These are packed with tropical flavor, and they're the ultimate refreshing summer dessert!
Quick and easy - All you need is passion fruit juice, orange juice, lime juice, cane sugar, and a little bit of water to make the popsicles! You stir all the ingredients together and pour it into your molds. The hardest part is waiting for the the popsicles to freeze!
Ingredients
- Passion fruit juice - While you can use fresh passion fruit pulp, it would take a lot of passion fruits to get 2 cups of pulp, so I use pure juice (pulp) instead. It often comes frozen in cubes in the freezer section with other frozen fruits. All you need to do is let it defrost in the fridge. I got mine in a can with seeds, which I recommend straining out. While they make the popsicles pretty, they're too annoying to eat.
- Orange juice - Freshly squeezed orange juice will give you the best flavor here, I don't recommend the one from a carton.
- Lime juice - Use freshly squeezed lime juice whenever possible. While passion fruit is already tangy enough by itself, lime juice ties all the flavors really nicely together.
- Quick simple syrup - All you need to do is mix hot water and cane sugar. The mixture doesn't need to simmer or boil, it should just be warm enough for the sugar to melt. I recommend doing this to make sure the sugar melts properly and doesn't settle to the bottom of the popsicles.
Variations and Substitutions
- Blend it with fruit - You can blend the juice with tropical fruits like chopped pineapple or mango. I recommend only fresh fruit because frozen fruit shouldn't be refrozen, and it could make the popsicles icy. Keep in mind that this will change the flavor, and you will have to use less passion fruit juice to avoid having too much for just 12 popsicles.
- Different sweetener - If you don't want to use cane sugar, you can use maple syrup, honey, agave syrup, or coconut nectar instead. These might make the popsicles a little darker and change the flavor a bit. If you use honey, make sure it's melted properly. You might want to mix it with a little bit of warm water first as you would granulated sugar.
- Lemon juice - If you don't have limes, you can use freshly squeezed lemon juice instead.
- Make them creamy - You can turn the fruity pops into ice cream by blending the ingredients with canned coconut milk. Keep in mind that the high acidity of the orange juice and passion fruit might cause the milk to separate. Store-bought pops often have some sort of stabilizer like xanthan gum.
Step-by-Step Instructions
- Mix water and cane sugar in a small saucepan over medium heat to make syrup. It doesn’t need to boil or simmer, the water should just be warm enough to melt the sugar quickly. Take it off the heat and set aside to cool.
- Strain the passion fruit juice (if it has seeds) into a large measuring cup, or allow it to defrost if it’s frozen.
- Add orange juice, lime juice, and the syrup and stir until well mixed.

- Divide the mixture into 12 popsicle molds and carefully place them in the freezer.
- I recommend waiting 30-60 minutes (based on the strength of your freezer) to insert the popsicle sticks. Because the mixture is very liquid, the popsicle sticks won’t stay straight. Once it’s frozen on top, you can push the wooden popsicle sticks through, and they should hold. Be careful not to wait too long.
- Freeze the popsicles for at least 8 hours.
- To remove them, run the molds under warm water briefly and gently pull the popsicles out.
- Enjoy immediately or transfer them into a large freezer bag in a single layer and return them to the freezer.
Success Tips!
- Wait to insert popsicle sticks - Because these popsicles are made of just juice, they'll be too liquid for the popsicle sticks to stay straight right away. I recommend waiting 30-60 minutes for the tops of the popsicles to freeze and then inserting them. If you don't, they'll freeze sideways, which will make taking the popsicles out of the molds much harder.
- Avoid the lid - A lot of popsicle molds come with a lid to help the popsicle sticks stay up. Using the lid is totally up to you, but I don't usually use it. If you fill the slots too high, the lid will stick to the popsicles as they expand, and it will be hard to remove. I once broke the lid trying to pull it off, so now I don't use it anymore.
Storing
Store the popsicles in a freezer bag or a freezer-safe container in the freezer for 2-4 months. The storage time will depend on how low your freezer temperature is and how well it keeps it.
Prevent them from sticking together: If you do store them in a container, I recommend first laying them out on a baking sheet lined with parchment paper and freezing them individually after you take them out of the molds. Alternatively, you can also lay them down in a single layer in a freezer bag. I usually use the bag method because my freezer is very small.
FAQs
Small paper cups! Fill them only about halfway to avoid giant popsicles. Once the popsicles are completely frozen, cut into the paper cup and peel it off the popsicle.

Notes
The popsicles might be slightly soft around the edges once you take them out of the molds, so it's important to return them to the freezer immediately after. Make sure you have enough space to be able to lay them flat until they're frozen solid to prevent them from sticking together.
