Why You'll Love These Parmesan Green Beans
Extra cheesy and garlicky - The green beans are tossed with grated parmesan and lots of minced garlic halfway through cooking. This gives the green beans a ton of garlic flavor and the parmesan gets nice and golden as it melts and sticks to the green beans.

Ingredients
- Green beans - You can use fresh or frozen green beans. Always cut off both ends because they're tough to eat if you're using fresh green beans. The frozen ones are usually already ready to eat. If you like using frozen green beans, check out my Roasted Frozen Green Beans too!
- Avocado oil - You can use any high-smoke point cooking oil you have on hand. I like using avocado oil for everything. Always make sure it's 100% pure avocado oil.
- Parmesan cheese - Parmesan melts and gets crispy in the oven with the garlic. The recipe uses parmesan cheese that's already bought grated. If you grate it at home using a microplane, you'll have to add more of it because it has a much bigger volume than parmesan grated professionally at the store.
- Garlic - Freshly minced garlic will give these beans an amazing flavor! It's added halfway through cooking to prevent it from burning and becoming bitter.
- Sea salt and pepper - I always recommend using sea salt or Himalayan pink salt instead of table salt. Freshly ground black pepper will yield the best flavor as well.
Variations and Substitutions
- Brussels sprouts - Though I haven't tried this, you could totally make the same dish with brussels sprouts! Roast them at the same temperature for roughly the same amount of time and add parmesan and garlic halfway through cooking.
- Pecorino cheese - I actually prefer pecorino over parmesan because I find it has a stronger, saltier flavor. Parmesan tastes very mild to me in most dishes so I often use pecorino. You can use the two interchangeably.
- Garlic powder - You can use garlic powder (granulated garlic) instead of fresh garlic if you prefer but it won't have the same extra garlicky flavor. If you're using the powder, you can add it with the salt and pepper in the beginning of cooking because it can withstand the heat.

- Preheat your oven to 425F (220C).
- Add the green beans to a large baking sheet.
- Drizzle them with avocado oil and toss to coat.
- Roast the green beans in the preheated oven for 15 minutes.

Storing and Reheating
Store any leftovers in an airtight container in the fridge for 3-4 days. Roasted green beans lose their crispiness very quickly as they cool (and once you refrigerate them) but they'll still be delicious.
You can eat the leftovers both cold and reheated. Reheat them in a preheated oven at 350F (175C) on a baking sheet lined with parchment paper so that the parmesan doesn't stick to the pan. Make sure to spread them out on the baking sheet so they crisp up again a little bit.

If you overlap your green beans too much on the baking sheet, they will steam rather than roast. This results in soft green beans instead of crispy ones. I have a small oven so I like roasting them in two batches.
