    This Turkey Avocado Sandwich comes together in under 15 minutes, and it packs a ton of flavor! It's made with toasted sourdough bread, thin slices of turkey ham, both fresh and sun-dried tomatoes, creamy avocado, lettuce, and pesto! It's an easy lunch and great for road trips or picnics!

    Why You'll Love This Turkey Sandwich

    Perfect combo of flavors and textures - Crispy toasted sourdough spread with pesto and topped with avocado, turkey ham, two kinds of tomatoes, pickled onion, and lettuce to add freshness. It's perfectly balanced, flavorful, and definitely not dry or soggy!

    Easy and simple - It doesn't require much work besides toasting the bread if that's your thing, and slicing the tomato and avocado. The whole prep should take less than 15 minutes. Then it's just a matter of layering everything and digging in!

    Great for lunch or a snack - Serve it for lunch on a hot day or take it with you on a road trip or a picnic! The sandwich has about 12 grams of protein, so it can make a great light but filling meal. This can vary greatly based on what ham you use or if you add any other protein like cheese or bacon.

    Ingredients

    • Bread - I recommend using sourdough for this sandwich and toasting it. The crunch is perfect in contrast with the rest of the ingredients.
    • Pesto - Instead of mayo, both slices are smeared with pesto (either homemade or store-bought). It's so good in this sandwich, I highly recommend adding it!
    • Turkey ham - Use your favorite deli turkey breast. I like oven-roasted turkey or smoked turkey slices here. If you have leftover Thanksgiving turkey, this is a great sandwich for it as well!
    • Tomatoes - I use both sundried tomatoes and a sliced fresh tomato because each adds a different flavor and texture. I actually used semi-dried tomatoes, which are plumper and softer than your regular sundried tomatoes, but both work.
    • Avocado - Choose a ripe, soft avocado with no visible brown marks on the flesh. Picking them always feels like a gamble, but I've had the best luck with buying them hard and letting them soften at home. When you buy them soft, you risk buying one that's been bumped or squeezed, so it will have more dark spots.
    • Pickled red onion - This is optional because the sundried tomatoes already provide a little bit of tang, but I also like to add my Quick Pickled Red Onions for another layer of flavor. You can also buy these at certain grocery stores.

    Variations and Substitutions

    • Add-ins - You can add some crispy bacon or a slice of cheese like Swiss cheese, Emmental, or cheddar. I also like to season the sandwich with some freshly ground black pepper.
    • Leftover turkey - If you have leftover turkey slices from Thanksgiving or Christmas and want to make something a little lighter for lunch, this sandwich is perfect for that!
    • Chicken ham - If you don't have turkey, you can always use deli chicken breast instead!
    • No pesto - You can add mayonnaise, dijon mustard, soft goat cheese, cream cheese, sundried tomato pesto, or any other spread. Even a little bit of olive tapenade would work here!
    • Gluten-free bread - You can easily make this sandwich with practically any type of bread, baguette, or even a croissant! Gluten-free or not!

    Step-by-Step Instructions

    1. Toast your bread if desired.
    2. Spread the pesto on both slices of bread.
    3. Top one slice with 1-3 thick tomato slices (depending on how large your tomato and bread are) and lettuce or baby spinach.

    1. Add turkey slices, sundried tomatoes, pickled red onion, and sliced avocado. Alternatively, you can mash the avocado and spread it on the other slice of bread.

    Serving and Storing

    The sandwiches are best enjoyed right away because the bread loses its crispiness after a while, especially after being stored in the fridge.

    That being said, this is still a great sandwich to take with you on a picnic or a road trip! (assuming you store it in a cooler bag)

    If needed, you can store it in an airtight container in the refrigerator for 1 day.

    FAQs

    How do I pick the right avocado?

    I always like buying mine firm and letting them ripen on the counter. Once ripe, I move them to the fridge. This way, it's less likely you buy one that's been squeezed too much or bruised. They're usually green when unripe and slowly turn black. Give them a very gentle squeeze to see if they're soft. They should feel slightly soft but not mushy.

    Ingredients

    • 2 large slices of sourdough bread
    • 1 tbsp pesto (I used my Pecorino Pesto)
    • ½ large tomato, sliced
    • 1-2 leaves of lettuce (or a few leaves of baby spinach)
    • 3-4 thin turkey ham slices (oven-roasted, smoked, or leftover roasted turkey)
    • 2-4 sun-dried tomatoes in oil, drained (I used semi-dried tomatoes)
    • 1-2 tablespoon Pickled Red Onion
    • ¼ avocado, sliced

    Instructions

    1. Toast your bread if desired.
