Turkey Avocado Sandwich

This Turkey Avocado Sandwich comes together in under 15 minutes, and it packs a ton of flavor! It's made with toasted sourdough bread, thin slices of turkey ham, both fresh and sun-dried tomatoes, creamy avocado, lettuce, and pesto! It's an easy lunch and great for road trips or picnics!

Ingredients

  • 2 large slices of sourdough bread
  • 1 tbsp pesto (I used my Pecorino Pesto)
  • 1/2 large tomato, sliced
  • 1-2 leaves of lettuce (or a few leaves of baby spinach)
  • 3-4 thin turkey ham slices (oven-roasted, smoked, or leftover roasted turkey)
  • 2-4 sun-dried tomatoes in oil, drained (I used semi-dried tomatoes)
  • 1-2 tbsp Pickled Red Onion
  • 1/4 avocado, sliced

Instructions

  1. Toast your bread if desired.
  2. Spread the pesto on both slices of bread.
  3. Top one slice with 1-3 thick tomato slices (depending on how large your tomato and bread are).
  4. Add the lettuce, turkey slices, sundried tomatoes, pickled red onion, and sliced avocado. Alternatively, you can mash the avocado and spread it on the other slice of bread.
  5. Close the sandwich with the other slice of bread and carefully slice it in half. Enjoy!

Notes

Storing: The bread will lose its crunch once refrigerated, but you can store the sandwiches in the fridge in an airtight container for a day if needed.
