    This Peach Pico de Gallo is refreshing, flavorful, and ready in less than 15 minutes! You only need 8 very simple ingredients and you can easily double it for a big party! It's great served with chips, in tacos or burrito bowls, and so much more! It doesn't involve any cooking so it's perfect for the summer! It's foolproof and always a hit.

    Why You'll Love This Salsa

    Fresh and flavorful - This pico de gallo is a peach spin on the Classic Pico de Gallo. Fresh summer peaches are amazing in combination with juicy tomatoes and bright cilantro so if you're a fan of this classic dip, you definitely need to try this peach version!

    Easy and simple - Fresh salsa is one of the easiest summer appetizers or snacks you can make! It has just 8 ingredients and takes less than 15 minutes to make. There's no cooking involved so it's perfect for those extra hot summer days when you want to spend minimal time in the kitchen.

    Great for a crowd - You can easily double or triple this recipe if you're hosting a big party or a summer BBQ. It makes a delicious appetizer with tortilla chips or a great side with any grilled meat, fish, or seafood!

    Ingredients

    • Peaches - Pick the best ripe peaches that aren't too mushy. You'll be dicing them into small pieces so making sure they're not overly ripe and too soft is essential.
    • Tomatoes - Any tomatoes work here but I prefer using Roma tomatoes. They're soft but they keep their shape well once chopped. If you don't want the pico de gallo to get too watery, remove the seeds from the tomatoes before you chop them.
    • Red onion - I highly recommend using red onion here for the best flavor. Make sure to finely dice it so you're not chewing on big pieces of onion. Yellow or white onion may also work in a pinch.
    • Cilantro - Fresh finely chopped cilantro adds a ton of flavor to this salsa. I don't recommend using dried cilantro because it won't have the same bright flavor.
    • Jalapeno - The recipe calls for just one jalapeno which keeps the dip on the milder side. If you want more heat, add more jalapenos! I highly recommend removing the seeds if you don't want the dip to be extra spicy.
    • Lime juice - Use freshly squeezed lime juice for the best flavor.

    Variations and Substitutions

    • Garlic - Add a grated small clove of garlic for more flavor. Remember, a little goes a long way!
    • Different herbs - Fresh cilantro is a classic for any fresh salsa but if you don't like it, you can use other herbs like parsley or chives. If you want to use fresh basil, I recommend following the recipe for this Tomato Peach Bruschetta instead. You could always serve it as a dip!
    • Different pepper - Jalapenos are very mild compared to some other peppers so add whatever you like most based on your heat tolerance! If you don't want the dip to be spicy but want to change things up, I highly recommend adding roasted poblano peppers!     Step-by-Step Instructions

    1. Add diced peaches, tomatoes, red onion, jalapeno, and cilantro to a mixing bowl.
    2. Add freshly squeezed lime juice and season with sea salt and pepper.
    3. Toss everything together gently until well mixed.
    4. Serve immediately with chips or add to tacos, burritos, bowls, salads, and more!

    Expert Tips

    • Tomato seeds: Always remove the seeds from your tomatoes to avoid the pico de gallo being too watery!
    • Add lime juice last: Once you add sea salt and lime juice, the tomatoes and peaches will start to release juices. If you want to prep everything a few hours early, keep all the chopped fruits and veggies in a bowl in the fridge and add the lime juice, salt, and pepper right before serving.

    Serving Suggestions

    • As a dip - By far the most popular way to serve this salsa is as a dip with tortilla chips! It's a delicious appetizer in the summer at any party or BBQ.
    • Tacos - Add it to tacos instead of any other salsa. It's especially delicious in any fish, shrimp, or steak tacos. Try it in these Spicy Shrimp Tacos!
    • Burritos - Add the salsa to any burritos or burrito bowls. It's delicious with battered shrimp or chicken but it's also amazing in vegetarian and vegan burritos. Try it in this Veggie Burrito Bowl.
    • Salads and bowls - Add it to any salads, rice bowls, or quinoa bowls. Try it with mixed greens, quinoa, grilled salmon, and guacamole!
    • As a side - You can serve this pico de gallo as a side along with other sides and protein like roasted or grilled chicken, fish, seafood, or steak.

    Storing and Make Ahead Options

    I recommend storing this salsa for only up to 2-3 days in an airtight container in the fridge. You can make it the night before if you need to prep it but I don't recommend storing it too long because the tomatoes and peaches start to release a lot of juices once you mix them with lime juice and sea salt.

    If you're making a big batch for a crown and need to prep some of it in advance, I recommend chopping the red onion, jalapenos, and tomatoes the night before. Store them either together or separately in an airtight container in the fridge. Bonus points if you're using vacuum-sealed containers to keep the veggies extra fresh. I don't recommend pre-chopping the peaches because they can turn brown as they sit.

    FAQs

    What makes pico de gallo different from salsa?

    Pico de gallo (aka salsa fresca) is made with all fresh ingredients and everything is chopped into small pieces that keep their shape. Salsa is usually made with roasted tomatoes and other ingredients and everything is blended rather than chopped.

    Why is my pico de gallo watery?

    To avoid your pico de gallo being too watery, make sure to remove the seeds from the tomatoes before you chop them and mix them with the rest of the ingredients. Tomatoes and peaches will release a lot of juices when you add lime juice and salt so if you let the salsa sit for 2-3 days, it will become watery even if you remove the seeds.

    Ingredients

    Units Scale
    • 2 cups diced peaches (2 peaches)
    • 1 ½ cup diced Roma tomatoes, seeds removed* (2 tomatoes)
    • ½ cup finely diced red onion (½ red onion)
    • 1 jalapeno, finely diced (seeds removed)
    • ½ cup finely chopped fresh cilantro (a handful of cilantro)
    • 2 tbsp freshly squeezed lime juice (1 lime)
    • ¼-½ teaspoon sea salt
    • ¼ tsp freshly ground black pepper

    Instructions

    1. Add diced peaches, tomatoes, red onion, jalapeno, and cilantro to a mixing bowl.
    2. Add freshly squeezed lime juice and season with sea salt and pepper.
    3. Toss everything together gently until well mixed.
    4. Serve immediately with chips or add to tacos, burritos, bowls, salads, and more!

    Notes

    Tomatoes: I highly recommend removing the inside of the tomatoes (the seeds) because it would release way too much water into the pico de gallo.

    Storing: Store any leftovers in an airtight container in the fridge for 3-4 days. Keep in mind that tomatoes and peaches will release a lot of juice the longer they sit in the lime juice and sea salt.

      This pico de gallo recipe came at the perfect time—there is a Mexican-inspired birthday party tonight, and fresh peaches are in season. I made the recipe earlier in the day, and I have to confess I've been sampling it periodically. It is so good. This will be a regular addition to my appetizer and snack tray.
