Italian seasoning is a blend of dried herbs that can be used in many ways. It often includes oregano, basil, parsley, and other dried herbs. There are many variations and endless uses. It's one of the most popular seasoning blends and a big staple in my kitchen.
Why You'll Love This Seasoning
Easy and simple - You only need 6 dried herbs and about 5 minutes to make this Italian herb blend. You can half the recipe to make a smaller batch or double or triple it for a bigger batch. Homemade seasonings last 6-12 months, depending on how fresh your dried herbs are, and they make amazing DIY gifts!
Better than store-bought - Making your own seasonings is more budget-friendly, often healthier than premade store-bought seasonings, and it tastes better! A lot of store-bought seasonings can have too much salt or various fillers or anti-caking agents added to them. I like buying herbs and spices I use often in bulk so that I can my own seasoning blends with them.
Lots of uses - You can use this seasoning for meats, fish, seafood, pasta, pizza, soups, sandwiches, sauces, dips, salad dressings, and more! It's one of my go-to herb blends for anything and everything.
Great all year round - Fresh herbs can get expensive, especially during winter. Having these mixed herbs always on hand saves you money and makes prepping meals so much quicker than having to wash and chop fresh herbs every time.
Ingredients
- Dried oregano - Oregano is the main ingredient in this spice mix and gives it lots of flavor. There are many varieties of oregano but the most common are Greek and Italian oregano. Any oregano you can get your hands on works here. I like using organic herbs whenever possible.
- Dried basil - Basil is a classic in Italian cuisine and can't be missing in this mix!
- Dried parsley - Parsley enhances the flavor of all the other herbs and it's a big part of any Italian seasoning.
- Dried thyme - Thyme is a classic and adds a depth of flavor to this spice mix.
- Dried rosemary - Rosemary is quite tough and spiky so I recommend crushing it before adding it to the rest of the herbs. You can do this in a mortal and pestle or in a ziplock bag and smash it using a meat tenderizer hammer. If you have neither, try crushing the rosemary in the palm of your hand as best as you can.
- Dried marjoram - Marjoram tends to be not as common as the other spices in this seasoning but I highly recommend adding it. If you've never used it, try it in these Zucchini Fritters with Garlic and Marjoram!
Variations and Substitutions
- Dried sage - Sage makes a delicious addition to this seasoning. You don't need much of it. One teaspoon would be plenty to add flavor.
- Chili flakes - You can add crushed red pepper flakes if you want to add a little bit of heat.
- Garlic and onion - Most Italian seasonings are made with herbs only but if you want to add more flavor, you can add some garlic powder and onion powder as well! I like using granules (not the fine powder but not the bigger chunks either).
- Sea salt - I don't recommend adding salt to this seasoning because it may not spread evenly and just fall to the bottom of your jar with all the dried herbs but if you're adding garlic and onion, you can add some salt as well if you prefer.

Tips & Tricks!
- If you want to save dishes, you can mix everything right in the jar you're going to store the seasoning mix in. I like storing it in small spice jars I saved from other spices so I mix it in a bowl because it wouldn't mix properly in a tiny jar. If you have a bigger mason jar, just add all the herbs and shake it up to mix it!
- Use fresh dried herbs - The better and fresher the dried herbs you're using, the longer the seasoning will last. It can last 6-12 months or even longer but the herbs lose their flavor as they sit. If they're extra fresh when you're making it, the finished seasoning will last you longer.
Serving Suggestions
- Meat, fish, and seafood - You can season practically any meat, fish, or seafood with this spice! Add it to marinades with other spices and sea salt. Try it on the salmon for these Creamy Salmon Gnocchi!

DIY gift - Because it stores and travels really well, it makes a great DIY gift! Make a bigger batch and divide the seasoning between small labeled glass jars. I recommend always making a note of the ingredients as well in case of allergies.
