Better than Starbucks - This drink is inspired by the gingerbread chai latte from Starbucks' holiday menu. It's made with chai concentrate, oat milk, and gingerbread syrup. Making it at home is easy, healthier, and cheaper! You can use strongly brewed chai instead of a concentrate to avoid any extra sugar and keep the cost down.
Homemade syrup - Nothing beats homemade syrup and this one couldn't be easier to make! All you need is dark brown sugar, water, and gingerbread spice mix. I opted for ground spice instead of whole spice to make things easier and to avoid the extra cost of buying multiple kinds of whole spices. The spices do settle on the bottom but easily mix when you stir the syrup.
Ingredients
- Chai concentrate - You can use any concentrate you like and have access to. If you want to avoid the extra sugar, use strongly brewed chai instead. Most concentrates call for a 1:1 ratio of chai and milk but always check the label. Some call for less chai and more milk. Starbucks uses Tazo chai concentrate.
- Gingerbread syrup - The syrup is made with dark brown sugar, water, and gingerbread spice mix. I highly recommend using dark brown sugar over regular brown sugar to get that nice molasses flavor that's common in gingerbread cookies.
- Oat milk - You can use any milk you'd normally use in your lattes but the original drink calls for oat milk. Almond milk also works if you want to keep it dairy-free or whole milk.
Variations and Substitutions
- Chai teabags - If you don't have chai concentrate, you can just brew some strong chai tea. Use 2-3 teabags for 1 cup of hot water. 1 cup makes 2 servings.
- A hot version - You can make this drink both hot and cold. To make it hot, warm up the chai concentrate on the stove (no need for it to boil, just wait till it's close to a simmer), steam or warm up your milk, and pour the two into a mug and add gingerbread syrup.
- Different milk - Though the original drink calls for oat milk, you can use any milk you like. Starbucks makes the drink with oat milk cold foam which is easier to achieve with a mix of regular heavy cream and milk. I find oat milk is much harder to froth into a cold foam.
- Store-bought syrup - If you don't want to make your own syrup, you can totally use store-bought! My go-to brand is Monin but Torani is also very popular.
Step-by-Step Instructions
If you're using homemade gingerbread syrup, you'll need to make that first. It takes only about 10 minutes but I do recommend making it ahead of time so that you can whip up the latte in just a couple of minutes in the morning.
Gingerbread Syrup
- Add dark brown sugar, water, and gingerbread spice to a medium saucepan and bring to a boil stirring constantly until the sugar dissolves.
- Lower the heat and simmer for 10 minutes stirring occasionally.
- Take the syrup off the heat and stir in vanilla extract.
- Pour the syrup into a glass jar and store it in the fridge. Wait for the syrup to cool before closing the jar with a lid.
Iced Gingerbread Oatmilk Chai Latte
- Fill a tall glass with ice.
- Add oat milk and gingerbread syrup.
- Pour chai concentrate over the milk and stir to combine.
- Top with a dusting of gingerbread spice and optionally whipped cream and a small gingerbread cookie. Enjoy!
Serving and Storing
Serve the latte as is or if you want it to be extra fancy, top it with whipped cream, a sprinkle of gingerbread spice, and a small gingerbread cookie! To keep the drink dairy-free, use vegan whipped cream. I used coconut milk whipped cream.
The chai latte is best enjoyed right away before the ice melts but the syrup can be stored for up to 2 weeks in the fridge. The recipe makes about 10 servings. You can easily half the ingredients to make a smaller batch of the syrup or you can freeze any leftovers. I like using a silicone ice cube tray because syrup tends to be harder to remove than plain ice because of the sugar.
FAQs
The original Starbucks drink is made with oat milk cold foam. In order for it to froth properly, you'll need vegan whipping or heavy cream. I skipped this step because it's harder to find than regular oat milk.
They use a chai concentrate. You can buy it at most grocery stores or online. Keep in mind that some concentrates can be very high in sugar.

My favorite is "Spice Girl Eats" brand but it's a local Toronto brand so that may or may not be relevant to you. When I don't have any concentrate, I use chai teabags instead. I usually do 2-3 bags per 1 cup of water. I like the Stash brand Double Spiced Chai or Holiday Chai. This is great when you want to avoid added sugar entirely. Hope that helps!
