Passion Fruit Popsicles

Description

These Passion Fruit Popsicles have just 4 simple ingredients, and they take 10 minutes to make! They're tangy, sweet, and so refreshing. It's the perfect summer dessert!


Ingredients

  • 1/2 cup water
  • 1/4 cup cane sugar
  • 2 cups passion fruit juice (or frozen passion fruit pulp)
  • 1/2 cup freshly squeezed orange juice
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Mix water and cane sugar in a small saucepan over medium heat to make syrup. It doesn’t need to boil or simmer, the water should just be warm enough to melt the sugar quickly. Take off heat and set aside to cool.
  2. Strain the passion fruit juice (if it has seeds) into a large measuring cup, or allow it to defrost if it’s frozen.
  3. Add orange juice, lime juice, and the syrup and stir until well mixed.
  4. Divide the mixture into 12 popsicle molds and carefully place them in the freezer.
  5. I recommend waiting 30-60 minutes (based on the strength of your freezer) to insert the popsicle sticks. Because the mixture is very liquid, the popsicle sticks won’t stay straight. Once it’s frozen on top, you can push the sticks through, and they should hold. Be careful not to wait too long.
  6. Freeze the popsicles for at least 8 hours.
  7. To remove them, run the molds under warm water briefly and gently pull the popsicles out.
  8. Enjoy immediately or transfer them into a large freezer bag in a single layer and return them to the freezer.

Notes

The popsicles might be slightly soft around the edges once you take them out of the molds, so it's important to return them to the freezer immediately after. Make sure you have enough space to be able to lay them flat until they're frozen solid to prevent them from sticking together.

Store them in the freezer in an airtight container or a freezer bag for 2-4 months.
