The best summer dessert - Nothing beats fresh juicy peaches in the summer and roasted peaches make the most amazing dessert when served with simple vanilla ice cream. I'm all about light fruity desserts in the summer and these peaches are just that!
Easy and simple - You only need 5 ingredients (with 2 optional add-ons) for the recipe and about 5 minutes of hands-on time. The peaches roast for 30 minutes which gives you plenty of time to prepare any other desserts, clean up the kitchen, or to entertain your guests.
Great for a crowd - You can easily double or triple this recipe if you're serving it at a larger gathering. No matter how many peaches you're roasting, it's always really easy and simple!
Ingredients
- Peaches - Pick the juicy ripe summer peaches for this one! It's okay if they're a little softer since we're baking them to soften them anyway. Make sure you're using freestone peaches so that you can remove the pit easily. With clingstone peaches, you'd have to cut around the pit and the sugar topping wouldn't pool in the middle the same way.
- Maple syrup - I went with extra dark maple syrup for the sweetener here to really enhance that maple flavor. Use light maple syrup if you prefer.
- Butter - Melted butter browns in the oven and mixes with the maple syrup creating an amazing sauce for the peaches.
- Bourbon - This one is totally optional, but bourbon adds delicious flavor to the peaches. The alcohol content evaporates in the oven as the peaches cook but the flavor will stay. If you don't want to use alcohol, add 1 teaspoon of vanilla extract instead.
- Cinnamon - Peaches and cinnamon are a popular combo and for a good reason! You don't need much here but it gives the peaches a ton of flavor.
- Sea salt - A tiny pinch of salt is all you need but it's needed to bring out the sweetness of the peaches and maple syrup. It rounds out all the flavor and I highly recommend adding it.
- Turbinado sugar - This one's optional but a little sprinkle of turbinado sugar on the peaches before they go in the oven helps them caramelize on top. You can also use brown sugar or even cane sugar.
Variations and Substitutions
- Nectarines or apricots - Change it up by swapping the peaches for some nectarines or apricots. With nectarines, you can follow the same steps as you would with peaches. If you're using apricots, you'll need more of them because they're smaller and I'd only bake them for 15-25 minutes.
- Olive oil - If you don't want to use butter, extra virgin olive oil is a great substitute and a great option if you need to keep this dessert vegan-friendly.
- Different sweetener - You can mix brown sugar with melted butter instead of maple syrup for brown sugar peaches! Use dark brown sugar for even more molasses flavor.
- Grill the peaches - If you have a grill and don't want to turn on your oven in the summer heat, you can totally make these on the grill instead! Just brush them in the sauce, grill on each side, and continue brushing with more of the sauce as they grill.
Step-by-Step Instructions
- Preheat your oven to 350F (175C).
- In a small bowl, whisk together maple syrup, melted butter, bourbon or vanilla extract, cinnamon, and sea salt.
- Add the peaches to a medium baking dish cut side up.
- Drizzle the maple butter mixture over the peaches so it pools in the middle and drizzle the rest around the peaches making sure you swirl them around so the whole peach is covered.
- Bake the peaches in the preheated oven for 25-30 minutes or until soft and caramelized on top.
- Serve them right away with ice cream, roasted almonds, pistachios, or other toppings. Enjoy!
Expert Tips
- Peaches: I used 3 peaches for the photos in this recipe but the sauce makes enough for 4. I prefer making it with 3 peaches because it gives me more sauce for drizzling but if you need just one extra peach and don't want to double the recipe, just add one peach!
- Maple butter sauce: The caramelized sauce on the bottom of the baking dish may separate in the oven. You can use a whisk to mix it quickly after baking before it cools and drizzle it over your peaches and ice cream.
Serving Suggestions
With ice cream - The best way to serve these peaches is as a dessert while they're still hot with vanilla ice cream and some toasted almonds. You can serve them with practically any ice cream you want but I like keeping it super simple to let the caramelized peaches shine.
For breakfast - You can add these roasted peaches to yogurt with some granola and as topping for oatmeal. You can even add them to smoothie bowls as a healthier version of serving them with ice cream!
Storing and Reheating
Fridge: You can store any leftovers in an airtight container in the fridge for 2-3 days. The sauce may separate as the butter hardens in the oven so I recommend reheating the peaches.
Freezer: You can store the peaches in the freezer in a freezer-safe container for 2-4 months. The peaches will be softer and more mushy once defrosted but since that's sort of the goal of this recipe, it doesn't matter much in this case.
Reheating: Reheat the refrigerated peaches in a preheated oven at 350F (175C) for about 10 minutes or until warmed through. If your peaches are frozen, I recommend defrosting them in the fridge overnight first.
Extra sauce: You can also make a half batch of the sauce and drizzle it over the peaches before you reheat them in the oven to get them more caramelized again and have extra sauce for drizzling over your ice cream!
FAQs
I don't recommend peeling the peaches. They get super soft in the oven and the peel is what's holding them together. You can peel them on a plate right before serving but I recommend just keeping the skin on.
I recommend using yellow freestone peaches. They're sweet and juicy, and they're easy to cut in half.
You don't want any peaches that are rock-hard because they were picked too early. If they're a little hard, place them in a closed paper bag for a day or two and they will ripen. It's okay if your peaches are on the softer side for this recipe because they soften in the oven anyway.
