Why This Recipe Works
Easy to make - This oatmeal is super simple, it takes less than 10 minutes to make and you only need 6 ingredients!
Creamy and light - The oats are cooked in almond milk which makes it extra creamy and gives it that peaches and cream flavor. You can also use canned coconut milk to make it even more decadent but I recommend mixing it with water because it's usually too thick.
Perfect for the summer - Nothing beats summer produce! You can use frozen peaches but I highly recommend using fresh summer peaches to get the best flavor. If you have too many peaches on hand, you should also try this Peach Baked Oatmeal!
Ingredients
- Rolled oats - You can use any type of oats but the cooking time will vary based on what you use. Quick-cooking oats will only take a few minutes so I recommend adding everything to the pot at the same time. Rolled oats are my favorite - they're creamy but have more texture than quick-cooking oats. Steel-cut oats will take 20-25 minutes to cook and will require much more liquid.
- Almond milk - I like using almond milk but any milk you use for oatmeal works here. I would stay away from canned coconut milk because it's too thick or you can dilute it with water in a 1:1 ratio.
- Peaches - Fresh or frozen peaches both work. You can either defrost the peaches ahead of time or just cook the oats for a little longer to thaw and warm them up.
- Flavorings - Vanilla extract and cinnamon are two classics I add to almost any oatmeal recipe. You can also add ground ginger or other spices.
- Sweetener - This is optional but I like to add a small splash of maple syrup to sweeten the oats. You can use any sweetener you prefer or skip it.
Variations and Substitutions
- More fruit - My go-to oatmeal usually has a few types of frozen fruits I have on hand at the time. My go-to's are wild blueberries, raspberries, strawberries, pineapple, and peaches. Any combination of these works.
- Overnight oats - Instead of cooking the oats, mix everything in a jar in the evening and leave it in the fridge overnight. You'll have your breakfast ready for you when you wake up!
- Bake it - You can make a single serving or try this Peach Baked Oatmeal that serves six!
Step-by-Step Instructions
Caramelized Peaches
I like to start with the peaches and then cook the oatmeal. Once the peaches are done, they can just sit in the pan for a few minutes while you make the oatmeal. If you let the oatmeal sit for too long, it will thicken up quite a bit. You can always add more milk or water to loosen it up but I like to serve it hot right away.
- To cook the peaches, melt butter in a large pan.
- Add sliced peaches, maple syrup, and sea salt.
- Toss gently and cook for 5-7 minutes.
- Add vanilla extract, cinnamon, and a squeeze of lemon juice. Set aside until ready to eat.
Peach Oatmeal
- Add almond milk and rolled oats to a small saucepan and bring to a boil.
- Lower the heat and simmer for 5 minutes stirring often to make sure it doesn’t burn. Add more milk or water if needed.
- Add peaches and cook for another 2 minutes. You can add them earlier if you want them to be more jammy.
- Stir in vanilla extract, cinnamon, and maple syrup if using.
- Serve with caramelized peaches or your favorite toppings. Enjoy!
Storing
Oatmeal: The oatmeal is best served right away. If you make a bigger batch and need to store it, keep it in an airtight container in the fridge for 2 days. You can reheat it on the stove with a splash of milk or water to make it creamy again.
Caramelized Peaches: The cooked peaches can be stored in the fridge an an airtight container for 2-3 days. You can either serve them cold or warm them up on the stove with a splash or water or butter and maple syrup.

Caramelized peaches: (2-3 servings) 3 peaches cut into wedges, 1 tablespoon butter, 2 tablespoon maple syrup, ⅛ teaspoon sea salt, ¼ teaspoon cinnamon, ½ teaspoon vanilla extract, 1 teaspoon lemon juice. Melt butter in a pan over medium heat. Add peaches and drizzle with maple syrup and add sea salt. Toss gently and simmer for 5-7 minutes. Add cinnamon, vanilla extract, and lemon juice. Toss and serve.
Store any leftover caramelized peaches in an airtight container in the fridge for 2-3 days.
