Strawberry Watermelon Smoothie

This Strawberry Watermelon Smoothie is the perfect smoothie for the summer, and it tastes just like a slushie but without any of the added sugar! It's light, refreshing, and naturally sweet. Just 5 ingredients and it can be ready in just a few minutes! Vegan and gluten-free.

Ingredients

  • 2 cups frozen diced watermelon
  • 1 cup frozen diced strawberries
  • 4-5 fresh mint leaves
  • 1/2 tsp fresh lime zest (optional)
  • 2 tbsp freshly squeezed lime juice
  • 1 cup coconut water (or more as needed)

Instructions

  1. To a high-speed blender, add frozen watermelon, strawberries, fresh mint leaves, lime zest if using, lime juice, and coconut water. Start with 1 cup of coconut water, adding more if needed.
  2. Blend on high until smooth. Use your blender’s tamper to help it blend. This smoothie is a little thicker.
  3. Pour the smoothie into a tall glass and garnish with a small slice of watermelon and some fresh mint if desired, and enjoy!

Notes

Frozen watermelon: I highly recommend freezing your watermelon ahead of time. Making the smoothie with fresh watermelon and adding ice would give you a very different, much more watery smoothie that would separate.

Storing: The smoothie is best enjoyed right away. If needed, store it in an airtight jar in the fridge for up to 24 hours.
