Healthy balanced breakfast - Each wrap packs about 18 grams of protein, they're vegetarian, and relatively low in calories compared to other wraps. They're made with simple, good-for-you ingredients, and they keep you full!
Easy and simple - The recipe calls for simple, easy-to-find ingredients. Egg whites, feta, spinach, and sundried tomatoes all wrapped up into a delicious breakfast that's ready in about 20 minutes.
Great for meal prep - These wraps can be made ahead and stored in the fridge for busy mornings when you don't have time to make breakfast. You can also freeze them to always have some on hand!
Ingredients
- Egg whites - If you're using eggs, pick large eggs to have the right amount of egg whites. Alternatively, you can also use bottled egg whites.
- Spinach - Fresh baby spinach is great here. You just need to wilt it in a pan and squeeze out excess water. You can use frozen spinach, but it will be more watery and will need extra squeezing.
- Sundried tomatoes - Your classic jarred sun-dried tomatoes are great here. I like using ones in just olive oil, but any brand you like works.
- Feta - Traditional feta cheese is usually made with sheep milk or goat milk. Cow milk feta also works if you prefer. Pick a block of feta, not pre-crumbled feta, to avoid unnecessary additives.
- Wraps - The Starbucks wrap is made with whole wheat flatbread, but any wrap you have and like works. The number of wraps this recipe makes depends on the size of your wraps. I like using classic large tortillas, but lavash wraps would also be great.
- Seasonings - Grated fresh garlic, sea salt, and freshly ground black pepper are all you need to season the egg whites. Fresh herbs would also be delicious. If you don't have fresh garlic, you can use garlic powder instead.
- Butter or cooking oil - You can cook the egg whites either in cooking oil like avocado oil or butter. I most often cook them in butter, or I use a mix of butter and the olive oil from the sundried tomatoes to give the eggs extra flavor. I recommend using unsalted butter.
Variations and Substitutions
- Sundried tomato cream cheese - The original Starbucks wrap has a little bit of sundried tomato cream cheese spread. I only added actual sundried tomatoes to the recipe because the spread is harder to find, but if you have one you like, you can spread it on the wrap.
- Fresh or dried herbs - You can add finely chopped fresh herbs to the wraps, like chives, parsley, or cilantro. If you want to season the eggs more, add some Italian Seasoning, oregano, thyme, or your favorite spice blend.
- Whole eggs - These wraps can just as well be made with whole eggs. I don't use bottled egg whites, so I often use whole eggs because I don't have any other use for the yolks, and they have lots of nutrients.
- More vegetables - You can add other veggies like cucumber, tomatoes, or roasted vegetables.
- Gluten-free - You can use a gluten-free wrap instead of a classic tortilla.
Step-by-Step Instructions
- Add a generous splash of water to a large skillet and add all the spinach.
- Cover and steam the spinach over medium heat, stirring occasionally until it’s all wilted (2-3 minutes).
- Transfer the spinach to a small bowl and wipe the pan with a paper towel.
- Squeeze as much water out of the spinach as you can once it’s cool enough to handle.
- Add butter or oil to the pan and set it over medium-high heat.
- Add minced garlic and cook for 30 seconds.
- Lower the heat to medium and add the egg whites.
- Cook the egg whites for 5-7 minutes until completely set, stirring often. Lower the heat if needed.
- Season with freshly ground black pepper to taste. You can also add sea salt here, but I usually skip it because the feta and sundried tomatoes are salty enough.

The wrap you can buy at Starbucks has the egg whites cooked into an omelette. You can do that as well, but I find it easier to scramble them instead to prevent them from sticking to the pan.
- To assemble the wraps, put one tortilla wrap on a large plate and add egg whites, spinach, feta cheese, and sundried tomatoes.
- Fold the wrap over on one side, then fold in the sides, and roll it to make a burrito.
- Toast in the oven at 350F (175C), a panini press, or in a pan with a little bit of oil.
Success Tips!
- Squeeze the water out of your spinach - Spinach can release a lot of water, and if you don't squeeze it out, it can make the wrap soggy.
Serving Suggestions
You can serve this wrap either straight from the fridge or you can warm it up either on a pan or in the oven, just like they do at Starbucks.
To warm up the wrap, preheat your oven to 350F (175C). Add the wrap to a small baking sheet and bake in the oven for about 15 minutes or until warmed through. If you're warming them up right after you make the wraps, they'll need less time in the oven as they're already warm and not from the fridge.
To warm up the wrap on the stove, I recommend adding a little bit of oil to the pan to avoid the wrap sticking to the pan. It also helps to crisp it up a little bit.
Storing
Refrigerator - Store the wraps in foil or in plastic wrap and place in an airtight container. Store in the fridge for 3-4 days.
Freezer - Wrap your wraps in foil first and then place them into a freezer bag or a freezer-safe container. Freeze for 3-5 months. It's best to thaw the wrap in the fridge overnight before heating it up. You can reheat it in the oven from frozen at 300F for about 20-30 minutes. You may have to slice the wrap in half towards the end to get it warm in the middle.

The wrap is a flatbread, and inside is sundried tomato cream cheese, egg white omelet, sundried tomatoes, baby spinach, and feta cheese.
You can save them for scrambled eggs for later or anything else. I often just add them to these wraps along with the egg whites because I really like them and don't like wasting food. I've never used boxed egg whites because I like fresh whole eggs, but if you only ever want egg whites, boxed egg whites might be a good option for you!

Whole eggs: If you have whole eggs and don’t want to waste the yolks, you can totally make this recipe with whole eggs instead! (I often do)

Can you reheat in the microwave?

Yes but it may make the wrap more dry or gummy. I've heard people wrap burritos in a damp paper towel before microwaving to prevent this. Always remove any foil.
I don't have a microwave so I can't guarantee good results and always recommend using the oven or stove.
