Description
This Peach Oatmeal is extra creamy, flavorful, and so easy to make. Top it with caramelized peaches or your favorite toppings!

- 1 cup almond milk (or milk of choice)
- 1/2 cup rolled oats
- 1-2 peaches, pitted and chopped
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1 tsp maple syrup (optional)
- Toppings: caramelized peaches (see notes), berries, yogurt, nut butter, hemp seeds
Instructions
- Add almond milk and rolled oats to a small saucepan and bring to a boil.
- Lower the heat and simmer for 5 minutes stirring often to make sure it doesn’t burn. Add more milk or water if needed.
- Add peaches and cook for another 2 minutes. You can add them earlier if you want them to be more jammy.
- Stir in vanilla extract, cinnamon, and maple syrup if using.
- Serve with caramelized peaches or your favorite toppings. Enjoy!
Notes
Caramelized peaches: 3 peaches cut into wedges, 1 tbsp butter, 2 tbsp maple syrup, ⅛ tsp sea salt, ¼ tsp cinnamon, ½ tsp vanilla extract, 1 tsp lemon juice. Melt butter in a pan over medium heat. Add peaches and drizzle with maple syrup and add sea salt. Toss gently and simmer for 5-7 minutes. Add cinnamon, vanilla extract, and lemon juice. Toss and serve.
Store any leftover caramelized peaches in an airtight container in the fridge for 2-3 days.
