Peach Oatmeal with Caramelized Peaches

Description

This Peach Oatmeal is extra creamy, flavorful, and so easy to make. Top it with caramelized peaches or your favorite toppings!


Ingredients

Units Scale
  • 1 cup almond milk (or milk of choice)
  • 1/2 cup rolled oats
  • 1-2 peaches, pitted and chopped
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 tsp maple syrup (optional)
  • Toppings: caramelized peaches (see notes), berries, yogurt, nut butter, hemp seeds

Instructions

  1. Add almond milk and rolled oats to a small saucepan and bring to a boil. 
  2. Lower the heat and simmer for 5 minutes stirring often to make sure it doesn’t burn. Add more milk or water if needed.
  3. Add peaches and cook for another 2 minutes. You can add them earlier if you want them to be more jammy.
  4. Stir in vanilla extract, cinnamon, and maple syrup if using. 
  5. Serve with caramelized peaches or your favorite toppings. Enjoy!

Notes

Caramelized peaches: (2-3 servings) 3 peaches cut into wedges, 1 tbsp butter, 2 tbsp maple syrup, ⅛ tsp sea salt, ¼ tsp cinnamon, ½ tsp vanilla extract, 1 tsp lemon juice. Melt butter in a pan over medium heat. Add peaches and drizzle with maple syrup and add sea salt. Toss gently and simmer for 5-7 minutes. Add cinnamon, vanilla extract, and lemon juice. Toss and serve.

Store any leftover caramelized peaches in an airtight container in the fridge for 2-3 days.
