Easy and simple - There are no complicated, hard-to-find ingredients in this smoothie. Everything can be found at more grocery stores and you may even have some of it already in your freezer or pantry. Plus the smoothie comes together in just 5 minutes!
Healthy summer breakfast or snack - This smoothie makes a delicious breakfast for hot summer days! Add your favorite protein powder to make it more filling and serve it as breakfast for one or even a light snack for two. It can be a great post-workout smoothie practically any time of the day.
Ingredients
- Pineapple - Frozen pineapple is best here but you can also use fresh.
- Blueberries - Frozen blueberries make the smoothie cool and thick but fresh blueberries work as well. I like using frozen wild blueberries for darker purple color and more antioxidants.
- Banana - Frozen banana makes the smoothie extra creamy and thick. I don't recommend using fresh banana, it has a different texture.
- Lemon - You'll need both lemon juice and lemon zest, so I recommend using fresh lemon, not bottled lemon juice. Choose an organic lemon for lemon zest whenever possible to avoid harmful pesticides and wax on the lemon.
- Coconut water - Coconut water gives the smoothie a refreshing tropical flavor and electrolytes. You can also use almond milk, water, or orange juice, if you prefer.
- Protein powder - This is optional, but I like to add a scoop of protein powder to make the smoothie more filling. I like vanilla or unflavored protein powder here.
Variations and Substitutions
- Orange - If you don't like the tangy flavor of lemon in smoothies, use orange juice and orange zest instead.
- Meyer lemon - For a sweeter lemon flavor, use Meyer lemon instead of regular lemon. They're usually in season for only a short period of time, so I most often just use regular lemons.
- Milk - You can use whole milk, almond milk, coconut milk, oat milk, or any other plant-based milk instead of coconut water if you prefer.
- Yogurt - Add some full-fat Greek yogurt or a dairy-free yogurt of your choice for an extra creamy texture.
- Nuts and seeds - Add a tablespoon of chia seeds, ground flax seeds, almond butter, or coconut butter to add more flavor, protein, and healthy fats. I don't recommend adding peanut butter because it doesn't go with the lemon flavor.
- Greens - Add a handful of baby spinach, kale, or mixed greens if you want to add more nutrients. Keep in mind that this may change the color of the smoothie.
- Ice - If you don't have enough frozen fruit and are using fresh fruit instead, add a handful of ice to cool the smoothie. It will make it a more slushy texture rather than creamy.

Storing
The smoothie is best enjoyed right away, but if needed, it can be stored in an airtight container in the refrigerator for up to 24 hours. Pick a container that fits the smoothie the best so that there isn't too much air. When the smoothie is exposed to too much air, it will oxidize too quickly and go bad faster.
Alternatively, you can also freeze the smoothie into popsicles. I recommend only keeping them in the freezer for 1-2 months because the smoothie has frozen fruit that should not be refrozen.
FAQs
Some people don't like bananas in their smoothies, so if that's you, feel free to skip it if all the other fruits are frozen. Nothing really makes a smoothie creamy just like frozen banana does, but frozen pineapple and blueberries will cool it down and thicken it on their own.
You can't really store the finished smoothie once it's blended, but you can measure all the frozen fruit and add it to single-serving ziplock bags. That way, you can just empty a bag into a blender, add lemon juice, lemon zest, and coconut water, and blend!
