Blueberry Pineapple Smoothie

This Blueberry Pineapple Smoothie is tropical, refreshing, and packed with antioxidants and vitamins! It's the perfect healthy breakfast or snack for hot summer days.

Ingredients

  • 1-2 cups coconut water (based on desired consistency)
  • 1 cup frozen pineapple
  • 1 cup frozen blueberries
  • 1 frozen banana
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 serving protein powder (optional)

Instructions

  1. Add all the ingredients into a high-speed blender. You can start with 1 cup of coconut water and add more later if needed.
  2. Blend on high until smooth.
  3. Serve immediately in a glass or in a bowl with your favorite toppings.

Notes

The smoothie is best enjoyed right away but you can store it in an airtight jar in the fridge for up to 24 hours. Choose a jar that best fits the amount of smoothie you have leftover. The less there is the less it will oxidize.
