Why This Recipe Works
Quick and easy - Mimosa is one of the easiest cocktails you can make! All you need are two ingredients and a few flute glasses. I added cinnamon sugar on the rim and a slice of apple as a garnish for a nicer presentation and a little added sweetness but you can totally skip that if you prefer. Another great simple prosecco cocktail is this Limoncello Spritz. It has limoncello, prosecco, and sparkling water.
A fall twist on the classic - We all know the classic mimosa made with champagne or prosecco and orange juice but it's fun to mix things up sometimes and try a different variation! Apple cider and cinnamon are the ultimate fall flavors and they work really well in this mimosa. If you want to try another variation, try this Grapefruit Mimosa with Rosemary which is great for the winter!
Ingredients
- Prosecco - You can either use Champagne or sparkling wine like Prosecco for this drink, it's up to you and what you prefer. I like using dry prosecco in a mimosa to balance out the sweetness of orange juice or in this case apple cider.
- Apple cider - I highly recommend apple cider over apple juice, it has much more flavor but apple juice could also work if you can't get a hold of apple cider. Make sure you're using apple cider and not apple cider vinegar.
- Sugar rim - The cinnamon sugar is made by mixing cane sugar and cinnamon together. You'll need agave syrup or honey for the rim to get the sugar to stick. You can also rum a lemon wedge around the rim but I find a thick sweetener works better here.
Variations and Substitutions
- Non-alcoholic - You can make a non-alcoholic mimosa by using sparkling water instead of prosecco or non-alcoholic sparkling wine.
- Orange juice - If you want to keep it more classic, you can add half of the apple cider to each glass and add some freshly squeezed orange juice as well.
Step-by-Step Instructions
- To prep the glasses, mix together the cane sugar and cinnamon in a small shallow bowl or a plate and set aside.
- Brush agave syrup around the rim of each glass and dip each glass in the sugar.
- Pour apple cider into the glasses about a quarter of the way up and top up with prosecco. I try to go for somewhere between a 1:2 or 1:1 ratio, it doesn’t have to be perfect.
- Garnish with apple slices and enjoy!
Serving and Storing
This cocktail is best made right to serving because of the Prosecco or Champagne. Anything carbonated doesn't store very well for too long because it loses all the bubbles as it sits. Luckily though, this drinks only takes a few minutes to make so it's easy to make right before serving.
FAQs
I highly recommend using apple cider, not apple juice. They have different flavors and apple juice won't give the drink the same amount of flavor. If you can't find apple cider, give it a try with quality apple juice.

Notes
Smaller batch: If you’re only making 2-3 servings, try to find a small bottle of prosecco that’s just enough for two people so that you don’t have to open an entire bottle. You’re going for more less 1 part of apple cider and 2 parts of prosecco or even a 1:1 ratio.
Ice: Because there’s no ice in these drinks, it’s important to make sure that both the prosecco and the apple cider and in the fridge for at least a few hours before serving, ideally overnight.
