Nothing says summer more than some refreshing watermelon slices! Now that melons are finally in season, it's time to take full advantage of them and get creative starting with watermelon! This Watermelon Coconut Rum Cooler comes together in minutes, it's super refreshing, and perfect for the summer!
What you need for this Watermelon Rum Cooler:
- watermelon chunks
- lime juice
- fresh mint
- agave syrup
- ice cubes
- sparkling water
The idea for this came from this fresh raw watermelon drink I bought and needed to use up. It has watermelon, lime juice, and mint. I tried adding some coconut rum I had leftover from making the Skinny Pina Coladas I posted on Monday and the perfect summer drink was born!
It comes together in seconds if you can find a watermelon drink in your grocery store (I used a local Toronto brand Green House Juice) but it's almost as easy if you can't. All you need to do is blend together some watermelon, lime juice, and fresh mint leaves, strain the mixture and serve it over ice with the rum, agave, and sparkling water.

Ingredients
Watermelon juice:
- 2 cups watermelon chunks
- 1 lime, juiced
- 4-5 fresh mint leaves
Watermelon Coconut Rum Cooler:
- 1.5 oz coconut rum
- 1 tsp agave syrup
- ice cubes
- ¾ cup watermelon juice
- Sparkling water
- Lime and mint (optional, for decoration)
Instructions
Watermelon Juice:
- Place all the ingredients into a blender and blend on high until smooth.
- Strain into a bowl through a fine-mesh strainer (optional but recommended).
Watermelon Coconut Rum Cooler:
- In a tall glass, combine the coconut rum and agave syrup and stir to combine.
- Top up with ice and pour in the watermelon juice. Add a slice of lime and a few mint leaves for decoration.
- Hold the glass on an angle and slowly pour in the sparkling water over the ice to the top (this creates the ombre effect)
- Serve decorated with a small watermelon slice or lime and some mint.
