Why This Recipe Works
Easy and simple - This is one of the easiest simple syrups. All you need are three ingredients and 15 minutes. The syrup is super easy to make and will last in the fridge for at least 2 weeks.
Fun new flavor - You can add this syrup to cocktails, mocktails, or even iced teas! Rosemary syrup is a flavor most people aren't used to in drinks but it's delicious. It's especially good in pomegranate or grapefruit-based drinks and perfect for the holidays. Try it in this Pomegranate Mocktail (photo below) or this Pomegranate Margarita.
DIY cocktail bar - This syrup would make a great addition to DIY cocktail bars at parties where people can make their cocktails. Just don't forget to make a couple more homemade syrups to offer your guests along with this one!
Ingredients
- Fresh rosemary - I highly recommend opting for fresh herbs here but if you don't have fresh rosemary, you can use 2 tablespoons of dried rosemary instead.
- Cane sugar - You can use white sugar or cane sugar here. I prefer cane sugar because it's slightly less processed than pure white sugar. I don't recommend any darker sugar because it might overpower the flavor of the rosemary.
- Water - The syrup is made with sugar and water in a 1:1 ratio.
Variations and Substitutions
Sugar-free - You can use any sugar substitute that can be used in a 1:1 ratio in place of regular white sugar. Alternatively, you can use agave but I don't recommend maple syrup because the flavor is too strong for this syrup.
Different herbs - If you don't have rosemary, fresh thyme or mint also make a delicious syrup for cocktails and mocktails.
Step-by-Step Instructions
- Add cane sugar, water, and rosemary to a medium saucepan.
- Bring the mixture to a boil stirring constantly until the sugar dissolves.
- Lower the heat and simmer the syrup for 10 minutes stirring occasionally.
- Remove from the heat and allow to cool for 5 minutes.
- Remove the rosemary and transfer it to a glass jar. Allow it to cool completely before closing with a lid.
- Store in the fridge for 2 weeks.
Serving Suggestions

- Iced teas - This might be slightly more out there but I think a little bit of rosemary syrup would be delicious in lemonade or berry iced tea like this Iced Raspberry Passion Tea Lemonade.
Storing
Fridge: You can store the syrup in an airtight jar in the fridge for two weeks. It should stay fresh for 2-3 weeks but I always recommend two weeks to be on the safe side. Always make sure to use a clean spoon when measuring the syrup.
Freezer: If you need to freeze any leftover syrup, pour it into ice molds and freeze. The smaller the molds the better because it's not a syrup you'd use lots of at once. I like mini ice cubes because the smaller the cubes the faster the syrup will defrost in your drink.

Yes, fresh thyme or fresh mint also make delicious syrups for cocktails or mocktails.
I highly recommend using fresh herbs but you can use dried rosemary in a pinch.
