Ingredients

- Espresso - I recommend making the espresso right before you make the cocktail to keep the flavor fresh and avoid it being bitter.
- Coffee liqueur - Any coffee liqueur you have on hand works here. I like using Kahlua because it's the most common one. If you don't have any, you can skip it.
- Raspberry chocolate syrup - The syrup is a mix of this Raspberry Simple Syrup with cacao powder. It's made with raspberries, water, cane sugar, cacao powder, vanilla extract, and a pinch of sea salt to balance out the sweetness.
Variations and Substitutions
- Coffee - If you don't have an espresso maker, you can use cold brew or regular brewed coffee. Add the same amount to keep the cocktail the same size.
- Decaf - Use decaffeinated espresso or decaf coffee if desired.
- Strawberries - If you don't have raspberries, you can make the syrup with strawberries instead!
- Just chocolate - If you want to skip the berries altogether, you can make the syrup with just cane sugar, water, and cacao for a mocha flavor.
Step-by-Step Instructions
Raspberry Chocolate Syrup
- Add cane sugar, raspberries, and water into a small saucepan.
- Bring the mixture to a boil stirring constantly until the sugar dissolves to make sure it doesn’t burn.
- Lower the heat and simmer the syrup for 15 minutes.
- Take the syrup off the heat and strain it into a large measuring cup or a bowl.
- Add sea salt, cacao powder, and vanilla extract to the syrup.
- Use a handheld milk frother to mix the cacao into the syrup. This takes a couple of minutes but it should mix in easily as long as the syrup is still warm.
- Transfer the syrup to an airtight jar and store it in the fridge for up to 2 weeks. Wait for it to cool completely before closing with a lid.
Raspberry Chocolate Espresso Martini
- Brew one shot of espresso and add it to a cocktail shaker with vodka, coffee liqueur, and raspberry chocolate syrup.
- Add a handful of ice and shake the cocktail vigorously for 5-10 seconds until very cold and frothy.
- Strain the cocktail into a martini glass. If you have a cocktail shaker with a built-in strainer, I recommend opening it and using something like a mason jar lid or a cocktail strainer to strain the drink into your glass. This will help to get more of the foam into your glass.
- Garnish with 3 coffee beans and fresh raspberries on a cocktail pick if desired and enjoy!
Storing
The syrup can be stored in an airtight jar in the fridge for 2 weeks. I don't recommend making anything else ahead of time, the cocktail is best made right to serving.
