Only 2 ingredients - This syrup is one of the easiest simple syrups you can make at home. All you need is just pomegranate juice and cane sugar! That's it! And it's ready in less than 10 minutes!
Great flavor - The syrup doesn't need much to be packed with amazing tangy but sweet pomegranate flavor! It has a deep red color that turns every drink light red or pink and gives it a true pomegranate flavor. It's so much better than store-bought syrups, you know exactly what goes in it, and it's much more budget-friendly!
Many uses - I love adding this syrup to sparkling water with a squeeze of lemon juice and a handful of ice. It's such a refreshing summer drink! Besides that, the syrup shines in lots of different cocktails, mocktails, tea (both iced and hot), sodas, or lemonade. Ingredients
- Cane sugar - I like using cane sugar in most of my syrups because it's less processed than regular white sugar but it still has a very neutral flavor that doesn't overpower other ingredients.
- Pomegranate juice - The better the pomegranate juice, the better the syrup! There's no water being used in this recipe, only pomegranate juice so pick one you like the most!
Variations and Substitutions
- Pomegranate seeds - If you don't have pomegranate juice, you can use pomegranate seeds (arils) instead. I chose juice because it's more readily available and often cheaper. Add 1 cup water, 1 cup cane sugar, and 1 cup pomegranate seeds to a saucepan and simmer for 10 minutes. Allow to cool for 5-10 minutes before straining.
- Sugar-free - I haven't tried this so I can't guarantee results but you can try using any sugar substitute that can be used in a 1:1 ratio in place of regular sugar. Keep in mind this may change the flavor of the syrup and it won't last as long because sugar is a preservative.
Step-by-Step Instructions
- Add cane sugar and pomegranate juice to a medium saucepan.
- Bring the mixture to a simmer stirring constantly until all sugar is dissolved to make sure it doesn’t stick.
- Simmer the syrup for 5 minutes.
- Take the syrup off the heat and allow it to cool for at least 5 minutes before transferring it to an airtight jar. Wait for the syrup to cool before closing the jar with a lid.
- Store the syrup in the fridge for up to 2 weeks.

Storing and Make Ahead Options
Fridge: This syrup can be stored in the fridge for up to 2 weeks. Make sure to keep it in an airtight jar and always use a clean spoon for the syrup.
Freezer: You can freeze any leftover syrup in a freezer-safe container. I like to freeze it in 1-4 portions so that I always know how much syrup I'm defrosting. You can also freeze it in an ice cube tray but the syrup doesn't freeze completely so it can be hard to get out of the molds.
Make ahead: Because this syrup can be stored in the fridge for quite a while, I highly recommend making it ahead. This way it will be cool enough so that it doesn't melt your ice and water down your drink. Plus your drinks will come together in a matter of minutes!

Yes! I used pomegranate juice because it's much easier and often also cheaper. Pomegranate arils (seeds) also take a while to get out of the pomegranate so using juice is much faster. Add 1 cup of pomegranate seeds and 1 cup of water to 1 cup of sugar and simmer for 10 minutes if you don't have juice.
