    This Pomegranate Mimosa is the easiest winter brunch cocktail! If you love classic mimosa, you'll definitely enjoy this one! It has all the classic flavors with added pomegranate juice and an option to add homemade rosemary syrup. Great for Christmas, New Year's, or any weekend brunch!

    Why This Recipe Works

    A classic with a twist - Mimosa is one of the most well-known cocktails and for a good reason! The combination of orange juice and Champagne or sparking wine like Prosecco is so good! In this one, we're adding pomegranate juice with the option to also add homemade rosemary syrup. It's so good, I promise you'll love it! You can also serve this Pomegranate Mocktail on the side with the same flavors but no alcohol.

    Easy to make - Mimosa is one of the easiest cocktails to make. No need for a cocktail shaker or any complicated gadgets. All you need are a few ingredients and a champagne glass. This also makes it a great drink for a crowd - just divide your ingredients between glasses and enjoy!

    Fancy but simple - Adding pomegranate juice and rosemary syrup to your mimosa makes it seem extra fancy but the ingredients are still really simple with nothing too expensive or hard to find. Impress your guests at your next brunch with this cocktail and it's sure to be a hit! If you want more options, you can also make this Grapefruit Mimosa with Rosemary!

    Ingredients

    • Champagne or Prosecco - A classic mimosa is made with Champagne but a sparkling wine like Prosecco is a great more budget-friendly option and just as delicious!
    • Orange juice - Freshly squeezed orange juice is always the best option or choose a quality orange juice, ideally not from a concentrate. The better the juice, the better the mimosa will be.
    • Pomegranate juice - No need for freshly squeezed, I recommend using 100% pomegranate juice. If you can't find any, pomegranate juice from concentrate will also do the job.
    • Rosemary syrup - This is totally optional. The cocktail will be sweet enough with just the orange pomegranate juices alone but rosemary syrup adds a little hint of flavor that goes really well with the pomegranate juice.

    Variations and Substitutions

    • Non-Alcoholic - You can use non-alcoholic prosecco to make the drink into a mocktail. If you can't find any, use a seltzer or sparkling water.
    • No orange juice - To enhance the pomegranate juice flavor even more, you can skip on the orange juice. I highly recommend the combination, it's so good!

    Step-by-Step Instructions

    1. Add pomegranate juice, orange juice, and rosemary syrup (if using) to a champagne flute.
    2. Stir with a cocktail spoon to mix.

    Storing

    The mimosa is best made right to serving. If you store it, the Champagne or Prosecco will fizzle out and won't be as enjoyable. You can squeeze your orange juice ahead of time though and store it in the fridge for 1-2 days in an airtight jar.
