Simple flavors and refreshing - I find nectarines don't get as much credit as peaches, but they totally should! I wanted to let them shine, so I kept the flavors really simple. The smoothie is made with coconut water to make it extra refreshing and light, while frozen banana makes it extra creamy and smooth.
Easy to make and versatile - You can easily make more servings or change things up to your liking, like add more fruit, less liquids, or more protein. The smoothie can be ready in as little as 5 minutes and doesn't require any complicated ingredients! It can be served as an afternoon snack for two or as breakfast for one.
Ingredients
- Nectarines - Frozen nectarines can be hard to find, so I usually just buy them fresh when they're in season, dice them, and freeze them for smoothies. They don't have the same fuzzy skin as peaches; they're completely smooth, and slightly more tangy. Use ripe nectarines that are soft to the touch but not mushy.
- Banana - I highly recommend adding frozen banana to thicken the smoothie and make it extra creamy. Fresh banana won't have the same effect. If you don't like bananas, you can add ice or avocado instead, but the smoothie will have a different flavor and might be more icy.
- Coconut water - This smoothie is made with pure coconut water, but if you don't have any, you could always make it with almond milk, yogurt, or fresh orange juice instead. You can also use still water, but the smoothie will have less flavor.
- Flavorings - I add a little bit of vanilla extract, or vanilla bean paste, and a small pinch of ground cinnamon. It balances the flavors and adds that little something.
- Protein powder - This is optional, but if I'm serving this smoothie for breakfast, I like to add a serving of protein powder. My favorite is unflavored, but vanilla is also great! Any other flavor might overpower the flavor of the nectarines.
Variations and Substitutions
- Peaches - If you can't find nectarines, you can easily make this smoothie with peaches instead!
- Milk or yogurt instead of coconut water - If you don't have coconut water or want to make the smoothie creamier, you can replace some of it with creamy yogurt (Greek yogurt or a good vegan yogurt), or all of it with milk of your choice. If you're using canned coconut milk, I recommend adding only about ¼ cup because it's very thick and heavy.
- Greens - You can add baby spinach or your favorite greens powder to up the nutrition and to sneak in some veggies. Keep in mind that this will change the color of the smoothie and most likely the flavor as well.
- Other add-ins - You can add flaxseeds or chia seeds for some extra healthy fats and fiber without really changing the flavor. You can also add a drizzle of honey or maple syrup if you like sweeter smoothies.

- Add frozen nectarines, banana, coconut water, vanilla extract, a pinch of ground cinnamon, protein powder, and honey, if using, to a high-speed blender.

- Add less liquid for a smoothie bowl - This recipe is meant to be served in a glass, so if you want to serve it in a bowl with toppings, add less coconut water to the blender at first and then only add more as needed. You want it to be much thicker so your toppings don't sink to the bottom of your bowl.
Serving and Storing
I usually serve the smoothie in a glass, but if you want to serve it in a bowl, you can top it with things like fresh berries, fresh nectarine slices, nut butter, seeds, granola, yogurt, or anything else!
This smoothie, just like any other smoothie, is best enjoyed right away. If you do need to store it, keep it in an airtight jar in the fridge for up to 24 hours. Try to pick a jar that fits it the best. The less air there is, the less the smoothie will oxidize.
FAQs
I never do, but I always try to buy them organic or at a local farmer's market. If your blender is strong enough, it should completely pulverize the peel. I actually like the little dark red specks in the smoothie! It adds color, and there are nutrients in the peel as well.
