Description

This Nectarine Smoothie is light, refreshing, and so simple! It makes a delicious light summer breakfast or a snack for two. It's creamy without any milk and vegan-friendly! Ready in 5 minutes!


Ingredients

  • 2 diced and frozen nectarines
  • 1/2-1 frozen banana
  • 1-2 cups coconut water
  • 1/4 tsp vanilla extract
  • Pinch of ground cinnamon
  • 1-2 scoops protein powder (optional, I use unflavored or vanilla flavor)
  • 1 tsp honey or maple syrup (optional)

Instructions

  1. Add frozen nectarines, banana, 1 cup of coconut water, vanilla extract, a pinch of ground cinnamon, protein powder, and honey, if using, to a high-speed blender.
  2. Blend on high until smooth. Add more coconut water as needed to reach your desired consistency.
  3. Serve in a tall glass as a single serving or in two short glasses for two. Garnished with fresh nectarines if desired, and enjoy!

Notes

Storing: The smoothie is best enjoyed right away. If needed, you can store it in an airtight jar in the fridge for 1 day.
