This Nectarine Smoothie is light, refreshing, and so simple! It makes a delicious light summer breakfast or a snack for two. It's creamy without any milk and vegan-friendly! Ready in 5 minutes!

- 2 diced and frozen nectarines
- 1/2-1 frozen banana
- 1-2 cups coconut water
- 1/4 tsp vanilla extract
- Pinch of ground cinnamon
- 1-2 scoops protein powder (optional, I use unflavored or vanilla flavor)
- 1 tsp honey or maple syrup (optional)
Instructions
- Add frozen nectarines, banana, 1 cup of coconut water, vanilla extract, a pinch of ground cinnamon, protein powder, and honey, if using, to a high-speed blender.
- Blend on high until smooth. Add more coconut water as needed to reach your desired consistency.
- Serve in a tall glass as a single serving or in two short glasses for two. Garnished with fresh nectarines if desired, and enjoy!
