The best berry lemon flavor - Freshly squeezed lemon juice and wild blueberries are one of the best flavor combinations! After sharing my favorite Lemon Blueberry Pancakes, I had to turn the combo into a smoothie as well! It's great for breakfast, brunch, or a snack.
Thick and creamy - Greek yogurt makes the smoothie extra creamy and a little tangy. It goes really well with the lemon and blueberries. Frozen bananas are magic in smoothies and this one is no different! It helps thicken up the smoothie much better than plain ice.
Easy and quick - All you have to do is toss everything into a high-speed blender and blend until smooth! It can be ready in as little as 5 minutes which makes it perfect for busy weekday mornings or anytime you want a quick and refreshing afternoon snack.
Versatile - A great thing about smoothies is how versatile they are! You can use different berries or even swap the lemon for an orange! You can add protein powder to serve it for breakfast or keep it light as a snack for 1 or 2 people.
Ingredients
- Blueberries - You can use both fresh or frozen blueberries but I recommend frozen for the best texture. Frozen blueberries thicken and cool down the smoothie along with frozen banana. I like using frozen wild blueberries.
- Lemon juice and zest - I highly recommend using freshly squeezed lemon juice for the best flavor as well as fresh lemon zest. Choose organic wax-free lemons whenever possible when testing lemons.
- Frozen banana - This is what makes the smoothie creamy and thick, I don't recommend skipping the banana. Adding ice won't give you the same smooth and creamy texture.
- Almond milk - Any milk will work here. I most often have almond or cashew milk on hand so that's what I use but oat milk, rice milk, boxed coconut milk, or regular whole milk are great options as well.
- Greek yogurt - Tangy full-fat Greek yogurt goes really well with the fresh lemon juice and zest and makes the smoothie extra creamy. You can use vegan yogurt if you prefer.
Variations and Substitutions
- Other berries - Blackberries, raspberries, or strawberries would also work great in this smoothie. You can use a mix of all of them for more flavor.
- More sweetness - If you want to add a little sweetener to the smoothie, I highly recommend honey, it goes great with lemon and Greek yogurt. If you want to keep it vegan, maple syrup, agave, or dates are also good options.
- Protein - Add a scoop or two of your favorite protein powder if you're having this smoothie for breakfast or as a post-workout meal. I like using unflavored protein powder by Sprout Living.
- Make it vegan - Use vegan yogurt and dairy-free milk for a vegan-friendly smoothie.

You could freeze any leftover smoothie into popsicles if necessary but if you're using frozen fruit, it's usually not recommended to refreeze anything that's been previously frozen.
