    This Iced Blue Butterfly Pea Flower Latte is made with blue matcha that gives it a beautiful light blue color. It's completely caffeine-free and delicious with floral or fruity syrups!

    Why This Recipe Works

    Beautiful blue color - The dark blue butterfly pea flower turns baby blue when you add milk and it makes for the most beautiful latte! Blue is the rarest color in nature and blue matcha is one of the very few foods you can use to make your drinks or food blue naturally!

    No caffeine - Even though it's called blue matcha, it has nothing to do with green tea. Blue matcha powder is made with dried flowers that have a beautiful deep blue color and makes the perfect caffeine-free latte. It has color-changing properties as well. The beautiful blue color turns purple when you add lemon juice, lime, or anything acidic.

    Mild flavor - Blue matcha is slightly earthy just like green matcha but it has a much milder flavor overall. You can't really taste it in the latte which makes this latte a great canvas for any flavored syrup. I highly recommend adding floral or fruity syrups! Even the milk you choose will alter the flavor of the drink so pick one you like the most. I prefer plant-based milk like almond or coconut.

    Ingredients

    • Butterfly pea flower powder - This is also called blue matcha but it has no caffeine. Butterfly pea flower are dried and ground up into a fine powder, just like green tea leaves for matcha and you can prepare a latte with the powder the same way you'd make a matcha latte. The powder has practically no flavor, it's just slightly earthy but not as much as regular matcha.
    • Milk - You can use whole milk or any milk you'd normally use in your lattes. I usually go with either almond milk or coconut milk (from a box, not a can).
    • Simple syrup - Because the blue matcha has no flavor, it's good to use a flavored syrup. I highly recommend floral syrups for this latte like a rose syrup, or a lavender syrup but strawberry syrup or vanilla syrup would also be delicious. You can make your own (super easy!) or you can use store-bought syrup like Monin or Torani.

    Variations and Substitutions

    • Whole dried flowers - If you don't have the powder, you can use whole dried butterfly pea flowers or dried petals. You'll need to steep them like regular tea so you'll need more water and the finished tea won't be as strong as it is with the powder. It's just like green tea vs matcha powder.
    • Matcha - The main feature of the latte is the beautiful bright blue color but if you don't have the blue matcha, you can always use regular matcha.
    • ​Sweetener - If you don't have any flavored syrups, you can use pure maple syrup instead or a sugar-free sweetener. Keep in mind the sweetener you use will change the flavor of the latte.
    • Make it hot - You can serve this drink both hot and iced. Just skip the ice and warm up your milk either on the stove or in a milk frother.
    • Add caffeine - You can add a shot of espresso to this latte to add some caffeine if you want but keep in mind the color of the drink will change.

    Step-by-Step Instructions

    1. Sift butterfly pea flower powder into a cup and whisk using a handheld milk frother or a matcha whisk.
    2. Fill a tall glass with ice.

    Serving and Storing

    The drink is best served right away just like any latte. If you want to make it extra special, you could serve it with whipped cream on top (I usually do coconut milk whipped cream) and a sprinkle of coarse sugar or a dusting of cinnamon or the butterfly pea flower powder to make it extra pretty.

    FAQs

    Can I use dried flowers instead of power?

    If you can't find the powder, you an use regular dried flowers to make steeped tea. It just won't be as strong and you'll have to make a large amount of it to be able to steep it.

    Does the powder dissolve?

    Yes, it dissolves when you whisk it with hot water just like matcha powder.

    Can I add coffee?

    You can add one or two shots of espresso if you have an espresso machine. Keep in mind that adding coffee will change the color of the latte and it won't be blue anymore.

      The prettiest latte ever! I used lavender syrup for a late afternoon treat. You do need a good syrup for this because it doesn't have much flavor otherwise.
