Sweet and spicy with lots of fresh herbs - Fresh rosemary brings all the flavor, while maple syrup and avocado oil caramelize and create a crunchy crust on the cashews. I also add red pepper flakes to make them spicy as well, but that's totally optional.

Ingredients
- Cashews - Make sure you're using raw, unsalted cashews.
- Fresh rosemary - I recommend using fresh rosemary because it adds much more flavor than dried rosemary and isn't as spiky.
- Avocado oil - I always use this oil for baking and cooking and I recommend it here because it has a neutral flavor and high smoke point. Use any neutral cooking oil you have.
- Maple syrup - It caramelizes in the oven and adds a delicious crunch to the cashews. You can also use honey if you prefer. I like darker maple syrup for a stronger flavor, but any you prefer works.
- Garlic powder - I highly recommend using garlic powder, not fresh garlic, because it would burn in the oven.
- Fine sea salt - Salt balances the sweetness of the maple syrup. Himalayan pink salt is
- Red pepper flakes - This one is optional, but great if you want to add a little bit of heat without overpowering the other flavors too much.

Variations and Substitutions
- Different nuts - You can make this recipe with practically any other nuts or seeds. You might just have to adjust the cooking time based on their size. Almonds, pecans, sunflower seeds, or pumpkin seeds are a few great options.
- Thyme - If you don't have rosemary, you can use thyme instead. You can also combine the two for more flavor.
- Cayenne pepper - If you want them extra spicy, swap the red pepper flakes for some cayenne.
Step-by-Step Instructions
- Preheat your oven to 375°F and prepare a large baking sheet lined with parchment paper.
- In a small bowl, mix together the avocado oil, maple syrup, finely chopped rosemary, sea salt, garlic powder, and red pepper flakes.
- Add the cashews to the prepared baking sheet and pour the rosemary mixture over them.
