    This Pomegranate Mocktail is made with the easiest homemade rosemary syrup and 3 other simple ingredients. It's the perfect drink for the holidays or any time you want to make a fancy drink anyone can enjoy!

    Why This Recipe Works

    Fun and flavorful - This mocktail is packed with flavor without being too sweet like most mocktails. The sweetness comes from homemade syrup which you'll only need a little bit of. The combination of pomegranate juice, rosemary, and a squeeze of lemon makes for a delicious drink that everyone can enjoy!

    Easy to make - The recipe calls for homemade rosemary syrup but it's really easy to make and totally foolproof! All you need for the rest of the drink is a cocktail shaker or a mason jar to shake it up and you're done!

    Great for any occasion - Pomegranate is a winter fruit which makes this the perfect mocktail for Christmas, New Year's, or the holiday season in general. That being said, this is a drink you can make any time of the year! The only fresh produce you need is fresh is rosemary and a lemon.

    Ingredients

    • Rosemary - Fresh rosemary is used for homemade rosemary syrup. If you don't have time to make the syrup, you can just muddle fresh rosemary in the cocktail shaker before adding the rest of the ingredients. Keep in mind you'll still have to add simple syrup or maple syrup to make the drink sweeter.
    • Cane sugar - Cane sugar is my go-to sugar for most syrups. It's neutral in flavor and won't overpower any other ingredients.
    • Pomegranate juice - Choose a good quality juice, preferably 100% pure and not from a concentrate. The better the juice the better the cocktail!
    • Lemon juice - Freshly squeezed lemon juice is always the best choice for the best flavor.
    • Seltzer - You can use plain sparkling water or something like lemon seltzer. I like ones that are unsweetened with no additives.

    Variations and Substitutions

    • Sugar-free - Use a sugar-free substitute if you don't want to use cane sugar.
    • Different herbs - If you don't have rosemary, fresh thyme is also a great option for the syrup.
    • Dried herbs - Fresh herbs are ideal but if you don't have any, you can use dried rosemary.

    Step-by-Step Instructions

    Rosemary Simple Syrup

    1. Add cane sugar, water, and rosemary to a medium saucepan.
    2. Bring the mixture to a boil stirring constantly until the sugar dissolves.
    3. Lower the heat and simmer the syrup for 10 minutes stirring occasionally.

    1. Remove from the heat and allow to cool for 5 minutes.
    2. Remove the rosemary and transfer it to a glass jar. Allow to cool completely before closing with a lid.
    3. Store in the fridge for 2 weeks.

    Pomegranate Mocktail

    1. Add pomegranate juice, lemon juice, rosemary syrup, and a handful of ice to a cocktail shaker.

    1. Shake vigorously for at least 5 seconds until cool and frothy.

    1. Strain into a glass filled with ice, top up with seltzer.
    2. Garnish with fresh rosemary and pomegranate arils. Enjoy!

    Serving and Storing

    The pomegranate mocktail is best served right away so that it doesn't get too watered down by the ice. That being said, you can also make a bigger batch if you're making it for a group and just keep it in a pitcher on the table with a little bit of ice to keep it cool. Serve over ice instead of putting all the ice into the pitcher itself.

    You can store the syrup in both the fridge and the freezer based on how quickly you'll use it up.

    • Fridge: Keep the syrup in an airtight jar in the fridge for two weeks.
    • Freezer: Pour the syrup into ice molds and freeze. I like using smaller ice cube molds because I usually use only a little bit of the syrup. You can defrost the syrup in a small container in the fridge before adding it to your drink.

    FAQs

    Can I make this as a cocktail?

    You can add a shot of vodka if you want to make it boozy or check out this Pomegranate Margarita.

    I don't have rosemary, what else can I use?

    You can use fresh thyme instead. Dried rosemary can also be used in a pinch but fresh is always preffered.

      Love a fun option for a mocktail at parties. This one isn't overall sweet or boring. The rosemary and pomegranate combo is perfect!
