Description

This Pomegranate Mocktail is made with the easiest homemade rosemary syrup and 3 other simple ingredients. It's the perfect drink for the holidays or any time you want to make a fancy drink anyone can enjoy!


Ingredients

Rosemary Simple Syrup

  • 1 cup cane sugar
  • 1 cup water
  • 2 sprigs of fresh rosemary

Pomegranate Mocktail

  • 3 oz pomegranate juice
  • 1 oz freshly squeezed lemon juice
  • 1/2 oz rosemary syrup
  • Ice
  • Seltzer (I use unsweetened lemon flavored or plain sparkling water here)
  • Garnish: fresh rosemary, pomegranate arils (optional)

Instructions

Rosemary Simple Syrup

  1. Add cane sugar, water, and rosemary to a medium saucepan.
  2. Bring the mixture to a boil stirring constantly until the sugar dissolves.
  3. Lower the heat and simmer the syrup for 10 minutes stirring occasionally.
  4. Remove from the heat and allow to cool for 5 minutes.
  5. Remove the rosemary and transfer it to a glass jar. Allow to cool completely before closing with a lid. Store in the fridge for 2 weeks.

Pomegranate Mocktail

  1. Add pomegranate juice, lemon juice, rosemary syrup, and a handful of ice to a cocktail shaker.
  2. Shake vigorously for 5 seconds until cool and frothy.
  3. Strain into a glass filled with ice, top up with seltzer, and garnish with fresh rosemary and pomegranate arils.

Notes

Store the rosemary syrup in an airtight jar in the fridge for 2 weeks. It makes 1 1/3 cup of syrup which is enough for about 12 servings.
