    Ah, snacks. They’re the best, right? To be honest, lately, I just snack on stuff throughout the day instead of having three big meals. I know I’m not the only one, though, and that’s why I’m bringing you these Cranberry Maca Baobab Energy Bites today!

    These were a long time coming and to be honest I didn’t even plan on creating this exact recipe. I did get inspired by my favorite energy bar but at first, I wanted to make a cranberry cherry baobab smoothie (no idea what that would taste like - I never actually tested it) but somehow I ended up with these energy bites instead. The results were delicious and that’s why I decided to share them here with you this morning.

    I love making energy bites/balls for work because they’re easy to eat, they give you loads of energy, and fill you up. There are so many options! I do love my chocolate snacks (check out these recipes here, here, and here - told ya ;) ) but it’s nice to change things up a bit every now and then and that’s when these beauties come in.

    Besides eating energy bites, I also love snacking on fresh fruits and vegetables from the farmer’s market, especially this time of the year. There’s really nothing better than fresh local berries. Cherries are also finally in season here in Ontario so I’m stocking up the freezer for smoothies and oatmeal *happy dance*. Maybe I’ll even try that cherry cranberry smoothie combo and let you know how it was in a future post hmmm.

    Cranberry Maca Baobab Energy Bites

    Ingredients

    Units Scale
    • 1 cup hemp seeds
    • 1 cup sunflower seeds
    • 1 ¼ cup dried cranberries
    • 4-6 Medjool dates (its manageable at 4 but 6 is best if you want it to stick together easily)
    • 1 tbsp baobab powder
    • 1 tbsp maca powder
    • ¼ tsp cinnamon
    • ¼ tsp vanilla powder (or extract)

    Instructions

    1. Add all the ingredients into a food processor and process until it all comes together and it's easy to form small balls with it.
    2. Take the mixture out of the food processor and start forming small balls. Store in an airtight container either in the fridge for a week or the freezer for a month.

      I first heard the word "baobab" on a show my daughter watches, The Lion Guard. But I didn't realize it was actually a fruit.
      This recipe looks and sounds very tasty. Thank you for sharing.
