This year has been going by so quickly, I can’t believe it’s almost the end of June! I feel like it was only weeks ago when I was deciding what to pack for my move to Canada. To think I’ve been here for almost two months already. Wow. It’s been exciting and terrifying at the same time but more about that later. Today i’m going to share 20 vegan early summer recipes I think you’re going to love. Some of these are my own recipes and some of them are recipes from other bloggers. One of the things I really enjoy here are the farmer’s markets. Especially the St. Lawrence farmer’s market here in Toronto with all the local farmers every Saturday. I usually buy so much food there I can hardly carry it all myself and it’s not even that expensive! We don't have this back in Prague. I mean, there are farmer’s markets, yes, but not to this extent. The produce is usually from a different country and most of the time the people selling it don’t even know where it’s from. And when it’s finally local, there isn’t much variety - it’s usually just things like carrots, beets, leek, potatoes, and tomatoes.
Here at St. Lawrence you can get local everything - root vegetables, lettuce, fresh herbs, sprouts (I wish we had sprouts back home!), all kinds of potatoes, peppers, zucchini, eggplant, dry legumes, mushroom, seasonal fruits, and even things like honey, maple syrup, coffee beans, and much more. And then you go to the main building where the farmer’s market is every day and there’s even more - literally anything you’re craving.
I do love farmer’s markets if you couldn’t tell haha.
Anyways, I hope this post comes in handy when you don’t know what to do with all the early summer produce that’s at farmer’s markets right now - asparagus, strawberries, rhubarb, spring onions, peas, etc. My personal favorite is the Summer Salad with Strawberry Vinaigrette.
