    This Sparkling Lavender Mocktail is the perfect floral drink for spring and summer! It's light, refreshing, and it has the perfect balance of sweet and tangy. You can use homemade lavender syrup or make it even easier with a store-bought one!

    What Makes This Lavender Mocktail Special

    Light, floral, and refreshing - The flavor of this mocktail is very simple but so good! It's really a simple mix of lemon and lavender, so it's very similar to lavender lemonade. If you like sparkling drinks, you've got to try this one!

    Shaker optional - You can make this drink right in the serving glass! While you can always use a shaker (or a mason jar) if you want to make extra sure everything is well mixed, it's optional. This makes prep much easier, and you can make several servings at the same time.

    Pitcher-friendly - You can easily make this in a big pitcher for however many servings you need! The recipe includes measurements for 6 people, but the single portion is very easy to multiply by a different number.

    Ingredients

    • Lavender syrup - You can use store-bought lavender simple syrup or make your own. I really like Monin lavender syrup, but Torani is also a popular one. A homemade one won't have the same beautiful purple color unless you make it with butterfly pea flower or some kind of food coloring. Keep in mind, butterfly pea flower turns blue when mixed with lemon juice.
    • Lemon juice - As always, I recommend using freshly squeezed lemon juice whenever possible for the best flavor.
    • Sparkling water - You can use either plain sparkling mineral water like Pellegrino, club soda, or any flavored sparkling water. I do recommend sticking with sugar-free sodas like LaCroix. Otherwise, the drink will be way too sweet.
    • Lavender bitters - This one is optional, but recommended if you really want to boost the lavender flavor. I used these Nickel 9 lemon lavender bitters.

    Variations and Substitutions

    • Add herbs or other flowers - You can add some fresh herbs to the drink, like lemon thyme, mint, or chamomile tea. I recommend using a shaker if you want to add fresh herbs to this drink. Add a small splash of rose water for a more floral drink.
    • Other floral syrups - Not to state the obvious, but this mocktail would be a great base for similar floral flavors. Try it with Rose Syrup or Chamomile Syrup instead of lavender and with Hibiscus Syrup and lime juice instead of lemon! You can also combine the syrups together!
    • Turn it into a mocktail - If you're hosting and you want to make both cocktails and mocktails, this drink is a great option for both! Gin, silver tequila, or vodka would work well here. You can also try my Lavender Gin Cocktail, which inspired this drink!

    Step-by-Step Instructions

    1. Fill a double old-fashioned glass with ice.
    2. Add lemon juice, lavender bitters if using, and stir well with a cocktail spoon.
    3. Alternatively, you can also do this in a cocktail shaker and strain over ice.

    Tips & Tricks!

    • Shaker or no shaker: You can either mix everything in the serving glass or shake the mocktail in a cocktail shaker (or a mason jar) first and then pour it over ice. I like the no-shaker option because it's faster with less clean-up, but if you want to make sure the syrup and lemon juice mix properly, use the shaker method.
    • Pitcher for 6 people: You can easily multiply the ingredients in the recipe card for however many servings you need, but to make it easier, here is a recipe for 6 servings. 6 oz lemon juice, 6 oz lavender simple syrup, 1 teaspoon lavender bitters, 30-50 oz sparkling water. Stir the lemon juice, syrup, and bitters in a large pitcher until well combined. Add about 1 cup of the sparkling water and stir again well. Add ice and top up with more sparkling water. Serve over ice with more sparkling water if desired.

    FAQs

    How do I give the mocktail a more purple color?

    You can add some butterfly pea flower in the form of either cooled tea, drops, or powder. Be careful with the powder because the drink could end up clumpy. I recommend dissolving the powder in a splash of warm water first. I used Monin Lavender syrup, which has a beautiful purple color.

    Notes

    I mixed everything in the serving glass, but if you want to make sure the lemon juice and syrup are properly mixed, you can shake them with ice in a cocktail shaker instead and strain over ice into your glass.
