    This Winter Spiced Oatmeal has got to be one of my favorite oatmeal recipes I've ever made. If I had to choose only one flavor of oatmeal this winter, it'd be this winter spiced oatmeal. The roasted fruit is what really makes it, though. It's full of flavor with all the delicious spices and caramelized maple syrup. Perfect for a chilly winter morning!

    The story behind this spiced oatmeal:

    If you know me, you know how much I love oatmeal. To say that I eat it for breakfast often would be an understatement. I pretty much eat it every day.

    My favorite ones include this Hazelnut Oatmeal with Caramelized Pistachios and Roasted Figs, and this Sour Cherry Chocolate Oatmeal.

    I still can't believe there's a lot of oatmeal haters out there! It always blows my mind when someone tells me they don't like oatmeal. I promise you, you're going to love this one. The secret to making oatmeal more enjoyable is to mix fruit into it aside from only putting it on top. I don't do it here because I like the combination of simple creamy oats and roasted fruit. On most days though, I put berries right into the oatmeal and it's honestly so good. It completely changes the consistency. It adds flavor and makes the oatmeal a bit thinner.

    In the case of this Winter Spiced Oatmeal, you can grate an apple or dice a pear and put it into the pot while the oatmeal is still cooking to make it more fun and even more filling and delicious.

    What winter spices you need:

    It's the spices you think of when you say winter or Christmas. The smell of gingerbread cookies, pies, and muffins. The main spice here is cinnamon but I also added allspice, ginger, cardamom, and clove. Here, I use ground spices and sprinkle them on the chopped fruit before putting it in the oven. I also added whole star anise to the pan to add flavor and use it as decoration right before serving.

    Description

    This spiced oatmeal is the perfect breakfast for a chilli winter morning. Delicious, comfroting, and hearty.


    Ingredients

    Units Scale

    Roasted Fruit*:

    • 1 apple
    • 1 pear
    • 2 plums
    • ¼ cup raw walnuts
    • 2 tablespoon maple syrup
    • a sprinkle of each: cinnamon, allspice, cloves, ginger, cardamom**
    • 4-5 pieces of whole star anise (or sprinkle ground star anise if you have it)

    Oatmeal:

    • 2 cups plant-based milk (I used hazelnut)
    • 1 cup rolled oats
    • 1 teaspoon vanilla extract
    • ¼ teaspoon blood orange extract (optional; or swap for ½ teaspoon natural orange flavour or a ¼ cup of freshly squeezed orange juice)
    • 1 teaspoon ground cinnamon
    • ½ teaspoon ground ginger
    • ¼ teaspoon ground allspice
    • 1 tablespoon maple syrup or honey (optional)

    Optional toppings:

    • Coconut yogurt (I used coconut kefir)
    • A spoonful of nut/seed butter of choice (I used almond)

    Instructions

    Roasted Fruit:

    1. Preheat your oven to 350F (175C).
    2. Line a baking sheet with parchment paper and spread the cut up fruit on it.
    3. Drizzle with the maple syrup and toss to evenly cover.
    4. Sprinkle on the spices and toss.
    5. Place in the oven and roast for 20-25 mins or until tender and golden. Don't stir or flip the fruit to avoid turning it into mush.
    6. Take out of the oven and enjoy immediately.

    Oatmeal:

    1. Bring milk to a boil in a small saucepan. Add the oats and the vanilla extract, and stir.
    2. Lower the heat and simmer, stirring often, for about 10 mins, or until the oats soak up the liquid. Add more milk as needed.
    3. Add the blood orange extract, cinnamon, ginger, allspice, maple syrup, and stir to combine.
    4. Serve in bowls topped with the roasted fruits and extra toppings of choice.

    Notes

    * You can use any fruits you have on hand here; another great fall/winter options would be: persimmon, orange, tangerine, quince. Also great with fresh pomegranate seeds sprinkled on top.

    **No measurements here, I went a bit heavier on cinnamon here than the rest of the spices but it's really up to you and your preference.
