Ingredients
- Rolled oats - Oats are naturally gluten-free but use certified gluten-free if needed. Rolled oats are the best option here. Quick-cooking oats will get too mushy and steel-cut oats won't cook properly.
- Eggs - Eggs help create more of a cake texture and add moisture. Skipping the eggs will yield denser oatmeal that won't raise as much. You can use flax egg to keep the baked oats vegan-friendly. Mashed banana or apple puree also work.
- Sweetener - The oatmeal itself is sweetened with maple syrup and the top gets sprinkled with turbinado sugar to create a delicious crust on top. You can substitute the maple syrup with honey, agave, or any other liquid sweetener.
- Berries - You can use fresh or frozen berries. I used strawberries, blueberries, and raspberries. Premade berry blend, blackberries, currants, or cherries all work great!
- Flavors - Ground cinnamon, ground ginger, and vanilla extract are added for extra flavor. You could also add cacao powder to make it into chocolate and berry-baked oatmeal!
Variations and Substitutions
Different fruit - If you're out of berries, you can add different fruits like peaches, nectarines, cherries, pineapple, apples, or pears. Try this Peach Baked Oatmeal!
Make it vegan - You can substitute the eggs with vegan egg substitutes like flax egg, mashed banana, or apple puree.
Chocolate chips - To add more sweetness and chocolate flavor, toss a good handful of chocolate chips or chopped chocolate into the batter before baking. You can also stir in some cacao or cocoa powder.
Step-by-Step Instructions
- Preheat your oven to 375F (190C) and prepare a 12x8 inch baking dish.
- Whisk together the wet ingredients except for milk. Add eggs, maple syrup, almond butter, vanilla extract, and sea salt to a large bowl and whisk until everything's well combined.
- Whisk in the milk and add rolled oats. I recommend adding the milk after you mix the other wet ingredients because that way, they're much easier to mix properly.
- Add frozen raspberries, blueberries, and chopped strawberries (or any other fruit of your choice). Use a spoon to mix them into the oatmeal mixture.
- I do this once the oven is done preheating and I'm ready to bake the oatmeal. If your fruit is frozen, you don't want it to sit in the bowl for too long and release too much water.
- Carefully pour the mixture into your prepared baking dish.
- Sprinkle with more blueberries and raspberries and sprinkle with turbinado sugar if desired.
- Bake the oatmeal for 45-50 minutes until golden on top.
Serving and Storing
Serving: Cut the baked oatmeal into 4-6 servings and serve with chocolate sauce (recipe below), fresh berries, yogurt, almond butter, or any other toppings of your choice. It's best to serve the oatmeal while it's still hot.
Storing: Store any leftover oatmeal in an airtight container in the fridge for 2-3 days. Serve cold or warm it up in the oven at 350F in an oven-safe dish for 10-15 minutes.
Homemade Chocolate Sauce
This is optional but I make my own vegan chocolate sauce to drizzle over the baked oatmeal right before serving. You can put it on oatmeal, ice cream, smoothie bowls, or fruits, or eat it by the spoonful (personal fav, no one's judging!).
It's super simple, so delicious, and it goes really well with the berries!
- You'll need ¼ cup almond butter, ¼ cup maple syrup, ¼ cup almond milk, 2 tablespoon cacao powder, ½ teaspoon vanilla extract, and ¼ teaspoon ground cinnamon.
- Mix everything in a bowl or a jar and drizzle over the baked oats. Store any leftover sauce in the fridge for up to 3 days. It will thicken in the fridge, just add a little more almond milk to make it pourable again.
