Strawberry Overnight Oats

Delicious overnight oats made extra delicious with homemade strawberry milk. Fancier than regular overnight oats but still really easy!

Ingredients

  • 1/2 cup milk (I use cashew or almond milk)
  • 1/2 cup plain yogurt (I use vegan coconut yogurt)
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 8-10 medium fresh strawberries, divided (plus more for serving)
  • 1 tbsp chia seeds (optional)
  • 1-2 tsp ground flax seeds (optional)
  • 1 cup rolled oats

Instructions

  1. Into a high-speed blender, add milk, yogurt, maple syrup, vanilla extract, cinnamon, 5 medium strawberries, chia seeds, and ground flax seeds if using. You can also stir the seeds in later but I like blending them in.
  2. Blend until smooth.
  3. Pour the mixture into a large bowl and stir in the rolled oats.
  4. Dice your remaining strawberries and stir them in.
  5. Cover the bowl with Saran Wrap or divide it into small containers and refrigerate overnight or at least 5 hours.
  6. Serve with more fresh strawberries, nut butter, more yogurt, honey, maple syrup, or some chocolate hazelnut spread, and enjoy!

Notes

Strawberries: You can use fresh or frozen strawberries for the ones that get blended but I recommend chopping up fresh ones to stir in and add on top. You can let the strawberries thaw a little bit to make blending easier.

Storing: Store the overnight oats in an airtight container in the fridge for up to 3-4 days. It tastes the best the first 2 days, after that, the strawberries become more mushy.

The recipe yields two servings, but if you're not very hungry in the morning, it can give you 3 servings.
