Raspberry Chia Overnight Oats with Acai

These Raspberry Chia Overnight Oats with Acai are vegan, gluten-free, and require no stovetop! They're one of my favorite breakfast dishes for the summer because they're so light and refreshing. Great for meal prep!

Ingredients

  • 1 cup raspberries
  • 3 tbsp chia seeds
  • 5 tbsp rolled oats
  • 2 tsp raw cacao powder
  • 2 tsp acai powder
  • 1 tsp maqui berry powder (optional)
  • 1/2 tsp cinnamon
  • a pinch of sea salt (NOT table salt)
  • 1 tsp maple syrup or honey (or to taste)
  • 1 cup dairy-free milk of choice (oat, almond, cashew, coconut, rice)

Instructions

  1. Wash the raspberries and mash them with a fork and set aside.
  2. Into a jar or anything else with a lid, add the chia seeds, oats, cacao, acai, maqui, cinnamon, and salt.
  3. Cover the jar with a lid and shake until everything is well incorporated.
  4. Add the milk, maple syrup, and the raspberries.
  5. Stir thoroughly with a spoon until well mixed.
  6. Cover with a lid and refrigerate overnight or for at least 3 hours.
  7. Top with your favorite berries, nuts, and drizzle with maple syrup/honey.
