Peach Caprese Salad

This Peach Caprese Salad is bright, flavorful, and so easy to make! Serve it as an appetizer or as a side at BBQs!

Ingredients

  • 2 peaches, pitted
  • 3-4 Roma tomatoes
  • 8 oz fresh mozzarella
  • Handful of fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1-2 tbsp balsamic glaze (also called balsamic reduction)
  • 1/2 tsp flaky sea salt (Maldon salt)
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Slice your peaches, tomatoes, and mozzarella into approximately ¼-inch thick slices. Make sure to use a sharp knife for clean slices.
  2. Arrange the sliced peaches, tomatoes, mozzarella, and whole fresh basil leaves on a large serving plate, alternating between the four.
  3. Drizzle with extra virgin olive oil and balsamic glaze, and season with flaky sea salt and freshly ground black pepper. Enjoy!

Notes

Store any leftovers in an airtight container in the fridge for 1-2 days. The tomatoes and peaches release a lot of water as they sit with the balsamic glaze and sea salt.
