Maqui Berry Oatmeal with Wild Blueberries

This Maqui Berry Oatmeal has a deep purple color thanks to the superfood maqui berry powder and frozen wild blueberries. It's creamy, vegan, and so easy to make! It has a little bit of cacao as well which goes really well with the berries. Enjoy with your favorite toppings!

Ingredients

  • 1/2 cup plant-based milk (cashew, almond, coconut, or oat are great)
  • 1/2 cup water (or more if needed)
  • 1/2 cup rolled oats
  • 1/4 cup frozen raspberries (frozen melt into the oatmeal better than fresh but both are ok)
  • 1/2 cup wild blueberries (fresh or frozen, or sub regular blueberries)
  • 2 tsp maqui berry powder (add more or less to taste)
  • 1 tsp cacao powder (optional)

Instructions

  1. Add the milk, water, and rolled oats to a small saucepan and bring to a boil.
  2. Lower the heat and simmer the oats, stirring often until they thicken and become creamy. Add more milk or water if needed.
  3. Stir in raspberries, blueberries, maqui berry powder, and cacao powder if using.
  4. Slowly warm up the oatmeal again over low-medium heat if you're using frozen fruit, stirring often.
  5. Serve the oatmeal with toppings of your choice like more berries, hemp seeds, nut butter, or yogurt, and enjoy!

Notes

If you don't have maqui berry powder, substitute it with acai powder.
