Description
This Mango Mocktail is made with easy homemade mango syrup, lots of fresh lime juice, and fresh mint. It can be made as a single serving or in a pitcher. It's incredibly refreshing and such a delicious combination of flavors!
Ingredients
Mango syrup
- 1 cup diced mango (fresh or frozen)
- 1 cup cane sugar
- 1 cup water
Mango Mocktail
- 1 1/2 oz mango syrup
- 1/2 oz freshly squeezed lime juice
- 8-10 fresh mint leaves
- Ice
- 1/2 cup sparkling water or club soda (or more as needed)
- Garnish: diced mango, a slice of lime, fresh mint
Instructions
Mango Syrup
- Add diced mango, cane sugar, and water to a small saucepan.
- Bring the mixture to a boil, stirring constantly until the sugar dissolves to prevent it from sticking to the bottom of the pan.
- Lower the heat and simmer it for 10 minutes.
- Take the mixture off the heat and allow to cool for 10-15 minutes.
- Strain the syrup through a fine mesh strainer, pressing down on the mango to extract as much juice out of it as possible.
- Store the syrup in an airtight container in the fridge for up to 2 weeks.
Mango Mocktail
- Add mango syrup, lime juice, and mint leaves to a cocktail shaker.
- Use a muddler to muddle the mixture to release flavor from the mint leaves.
- Add a handful of ice and shake the mocktail vigorously for a few seconds until very cool to the touch.
- Strain the drink into a short glass over ice and top up with sparkling water.
- Garnish with diced mango, a slice of lime, and fresh mint if desired. Enjoy!
Notes
Mango syrup: The recipe makes about 1 2/3 cups of syrup, which is enough for 6-7 drinks. You can halve the recipe if you prefer to make less. I highly recommend making the syrup ahead of time to speed up the process of making the mocktail.
Storing: Store the syrup in an airtight jar or container in the refrigerator for up to 2 weeks or in the freezer for up to 3-4 months. Due to the high sugar content, the syrup never freezes solid so it can be used straight from the freezer.
