Lemon Blueberry Baked Oatmeal

Lemon Blueberry Baked Oatmeal is delicious, easy, and great for busy mornings! It's packed with blueberries and fresh lemon. Freezer-friendly!

Ingredients

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/4 cup melted unsalted butter (or vegan butter)
  • 2 tbsp grated lemon zest (2 lemons)
  • 3 tbsp freshly squeezed lemon juice (1-2 lemons)
  • 2 tsp vanilla extract
  • 1/4 tsp fine sea salt
  • 2 cups milk (I use almond milk)
  • 2 cups blueberries (fresh or frozen)
  • A knob of butter
  • 2-3 tbsp turbinado sugar (optional)

Instructions

  1. Preheat your oven to 375F and prepare a 12x8-inch baking dish.
  2. Whisk together rolled oats, baking powder, and cinnamon in a medium bowl. Set aside.
  3. In a large mixing bowl, whisk together eggs, maple syrup, melted butter, lemon zest, lemon juice, vanilla extract, and sea salt.
  4. Add milk and whisk again.
  5. Add the dry ingredients and stir to mix.
  6. Stir in the blueberries just until incorporated. If they’re frozen, don’t stir the batter too much to avoid them and turning the batter purple.
  7. Use a knob of butter to grease your baking dish and pour in the batter.
  8. Sprinkle the batter with turbinado sugar if using.
  9. Bake the oatmeal in the preheated oven for 45-50 minutes or until slightly golden.
  10. Take it out of the oven and allow it to rest for 5 minutes before cutting it into 6 squares.
  11. Serve on its own or with your favorite toppings and enjoy!

Notes

Optional toppings: yogurt, nut butter, fresh berries, chopped fruits, jam, nuts, or seeds.

Storing: Store leftovers in an airtight container in the fridge for 3-4 days. Place parchment paper in between the slices to prevent them from sticking together.

Reheating: Reheat the oatmeal in a preheated oven at 300F on a small baking sheet or a baking dish for 10 minutes. You can reheat the oatmeal from frozen for 15-20 minutes or defrost it in the fridge overnight first.
