Frozen Pineapple Margarita

This Frozen Pineapple Margarita is the perfect cocktail for summer! It's easy to make and so refreshing. You can easily make it into a mocktail as well!

Ingredients

Pineapple Simple Syrup

  • 1 cup finely diced fresh pineapple
  • 1 cup cane sugar
  • 1 cup water

Frozen Pineapple Margarita

  • 1 cup frozen pineapple
  • 4 oz silver or reposado tequila
  • 1 oz Cointreau (or your favorite orange liqueur)
  • 2-3 oz pineapple simple syrup
  • 2 oz freshly squeezed lime juice
  • 2 cups ice
  • Garnish: pineapple wedges, lime slices (optional)

Instructions

Pineapple Simple Syrup

  1. Add pineapple, cane sugar, and water to a medium saucepan.
  2. Bring the mixture to a boil stirring constantly until the sugar dissolves.
  3. Lower the heat and simmer the syrup for 15 minutes.
  4. Allow it to cool for 5-10 minutes and strain the syrup squeezing as much juice out of the pineapple as possible.
  5. Pour into a glass jar and wait for it to cool down before closing with a lid.
  6. Store in the fridge for up to 2 weeks.

Frozen Pineapple Margarita

  1. Add all the ingredients into a high-speed blender.
  2. Blend on high until smooth. You might have to use the tamper to help the margarita blend without adding more liquid.
  3. Serve right away garnished with fresh pineapple or lime slices.

Notes

Non-alcoholic version: Use non-alcoholic spirits instead of tequila and Cointreau or use water, soda, orange juice, or pineapple juice instead.

The syrup makes about 10 servings and lasts 2 weeks in the fridge. It can be easily halved if needed or you can freeze any leftovers.
