Description
These Christmas Waffles are the perfect festive waffles for the holiday season! They're easy to make, quick, and packed with warming spices. Great for meal prep and freezer-friendly!
Ingredients
- 2 cups flour (I use Bob’s Red Mill gluten-free 1:1 mix)
- 1 tbsp Christmas spice (or gingerbread spice)
- 2 tbsp cacao powder
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 large eggs
- 3 tbsp honey (or maple syrup)
- 3 tbsp melted unsalted butter
- 2 tsp vanilla extract
- 1/2 tsp sea salt
- 1 tbsp dark rum (optional)
- 2 cups buttermilk (see notes on how to make vegan buttermilk)
- Cooking oil in a spray (I use avocado oil, or sub 1 tbsp cooking oil)
Instructions
- In a medium bowl, whisk together flour, Christmas spice, cacao powder, baking powder, and baking soda. Set aside.
- In a large mixing bowl, whisk together eggs, honey, melted butter, vanilla extract, sea salt, and dark rum if using.
- Add buttermilk and whisk again.
- Add the dry ingredients to the wet ingredients and whisk until just mixed. You can do this in two batches. Do not overmix, the batter can have a few lumps.
- Heat up your waffle iron (I set mine to medium heat), spray with a little bit of cooking oil or brush some on and spoon in the batter to make waffles. I do about ¼ cup of batter per waffle. This will depend on the size of your waffle iron.
- Cook the waffles for 3-5 minutes until golden or according to manufacturer’s instructions.
- Repeat with the rest of the batter adding more cooking oil as needed.
- Keep your waffles hot in a preheated oven at 200F. Lay them on a baking sheet in a single layer to keep them crispy on the outside.
- Serve with yogurt, nut butter, berries, or your favorite toppings, and enjoy!
Notes
Vegan buttermilk: Measure 2 cups almond milk and remove 2 tbsp. Add 2 tablespoons lemon juice or apple cider vinegar and stir gently. Let the mixture sit for 5-10 minutes. It’s ready when it slightly thickens and curdles.
Storing: Store in an airtight container in the fridge for 4-5 days. Freeze in a freezer-safe container or a freezer bag for up to 6 months.
Reheating: Reheat the waffles in the oven at 300F (150C) or in a toaster until warmed through. You can reheat them from frozen or defrost them in the fridge overnight first.
