What you need: Russet potatoes Cooking oil Spices Cherry tomatoes Baby spinach Eggs Butter Avocado Ketchup Pickled red onion

Dice and roast the potatoes with spices and cooking oil at 450F for about 25 minutes.

Roast the cherry tomatoes in the preheated oven with salt, pepper, and oil for 10 minutes.

Sautee the spinach with a splash of water in a large pan until wilted.

Soft scramble the eggs for 4-5 minutes with butter, salt, and pepper. Use a rubber spatula to move them around the pan.

Add everything to a plate with avocado, pickled red onion, ketchup, and extra black pepper.
