The Best Vegan Creamed Spinach

What you need: Baby spinach Onion Garlic Avocado oil Cashew milk Nutritional yeast Chili flakes Salt and Pepper Tapioca starch

Blanch the spinach and transfer to a bowl with iced water.

Squeeze as much water as you can out of the spinach.

Saute the onion and garlic with avocado oil.

Add cashew milk, nutritional yeast, chili flakes, sea salt, and pepper. Cook for 5 minutes.

Add tapioca starch mixed with water to thicken the sauce and more seasoning if needed. Simmer for a few minutes.

Chop the spinach if desired and add it to the sauce. Stir until mixed and warmed through. Add a splash of milk if needed.

Serve hot garnished with more chilli flakes and nutritional yeast.
