Roasted Zucchini Rolls with Guacamole

What you need: Dried oregano Dried thyme Garlic powder Onion powder Smoked paprika Chili flakes Sea salt Zucchinis Guacamole

Mix all the spices together in a small bowl and set aside.

Slice your zucchinis into approximately 1/4 inch thick slices.

Lay the zucchini slices on a baking sheet lined with parchment paper, spray with cooking oil, and sprinkle with seasoning on both sides.

Roast the zucchini at 400F for 15 minutes. Carefully flip and roast for 5 more minutes.

Spread a thin layer of guacamole on the zucchini slices and roll them up into rolls. Secure them with a toothpick.

Serve them as an appetizer or a side with a choice of protein. Delicious with roasted fish or chicken.
