Roasted Chili Corn Salsa

What you need: Poblano peppers Fresh corn Red onion Jalapeno Fresh cilantro Lime juice Lemon juice Sea salt

Roast poblano peppers at 400F for 10-15 minutes.

Peel off some of the blackened skin, remove the seeds, and finely chop the peppers.

Cut the corn off the cobs and add to a large bowl.

Add the corn, red onion, poblano peppers, fresh cilantro, and jalapeno to a large bowl.

Add lime and lemon juice, sea salt, and toss to mix.

Serve on its own with tortilla chips, in burritos, bowls, in tacos, or salads!
